Now coming back to todays recipe....Curries are one of the essential part of indian cooking.Indian food is not completely finshed with out a bowl full of Curry and Rice.Curries are basically made with chicken,vegetables or anything that are cooked in Cocount milk or Coconut paste..But Coconut is must in making any sort of curry.The curry I tried is with eggs,I made it entirely based on Coconut milk,It was so creamy and absolutely delicious.I will highly recommend everyone to try this once.I was a great party dish too,It goes well with anything,But it will great with appam or idiyappam…and this recipe goes to WomensEra2008 Event Announcement for Currys.So try it and please leave comments.
Ingrediants:
Egg-4 boiled
Onion-1 chopped finely
Tomato - 2 finely chopped
Tomato - 2 finely chopped
Ginger garlic paste-1 tblspn
Green chilli-2 slitted
Red chilli pdr -1 tblpsn
Coriander pdr(taniya'malli podi)-1 tblspn
Turmeric powder(manja podi)-1 tsp
Garam masala prd-1tsp
Kasuri methi leaves(Dried ventaya keerai)-2 tsp
Thick coconut milk-3 cups(if using cans use about 2 cans)
Coriander leaves-for garnishing
Lemon juice-1 tsp
Salt to taste
Sugar-2 tsp
Method:
In a kadai add oil and Stir in the ginger garlic paste.
Add onions and cook till golden brown,then add in the green chili and throw in all the spices and mix well.
Now add in the the tomatoes and cook till the tomatoes become soft.
Add the kasuri methi leaves and mix well.
Pour in all the coconut milk and let it come to a boil.Add in the salt and sugar to taste.
Let it simmer for 5 mins.Now put in the eggs and mix well.
Garnish with coriander leaves and squeeze in a little lemon juice.
Serve hot with Appam,Idiyappam,Chappati or Rice.

Hey, Aarthi! I have a question. The recipe mentions tomatoes and they are pictured, but they are not present in the ingredient list. How many tomatoes do you need for this dish? I added two and it was fine, but I thought I'd ask.

Tried the egg gravy tonit for chapathi n it was very delicious. But my husband Said tat it was too sweet. I'm not sure whether adding 2 tsp of sugar made the gravy sweet ...
