Hope you all had a great weekend…I bake some goodies this weekend…I made Banana cake and Coconut Kisses.It came pretty good..but unfortunately I couldn't take photos because I didn get my camera back..Hope I will get it today..So I will make it again and post those recipe soon.

Todays recipe is Palak Paneer….Palak Paneer is a traditional North Indian delicacy and is an integral part of the Punjabi cuisine.I don’t eat spinach a lot,but I love palak in anyform..This spinach has a unique taste and flavour.There are couple of method to prepare this dish.I fried the paneer in this dish,but if you want a very softer paneer,Do the following steps…..Take a sauce pan with water and boil it,when it comes to a good boil add the paneer and simmer it for 2 min,take it off the flame and let it sit in that water for 5 min,Drain it and use.Sometimes the paneer we use will be so stringy and tough.....By this method your paneer will just melts in your mouth.So please try this dish and let me know what you think...Happy Weekahead......

Ingrediants:

Palak leaves(pasala keerai)-1 bunch
Paneer-1 packet
Onion-1 chopped
Tomato-1 chopped
Garlic-5 chopped
Red chilli powder-1 tblspn
Coriander powder(malli podi)-1 tblspn
Cumin powder(jeeraka podi)-1 tsp
Garam masala powder-1 tsp
Cumin seeds(jeerakam)-1 tblspn
Fresh cream-2 tblspn
Oil-1 tsp
Ghee-1 tblspn
Salt to taste
Sugar-1 tsp

Method:

Add palak with a splash of water in a sauce pan and boil it for 3 min.Let it cool and make it into a fine paste.

Fry the paneer in some oil and set it aside.

In a kadai add oil+ghee and heat it up.Add in garlic and cumin seeds  and cook for 1 min.

Add in the onions and fry till golden.Now add in all the spice powders and mix well.Add in tomatoes and mix till oil separates.

Now pour in the palak puree and mix well,Add in kasuri methi leaves,salt,sugar and cook till oil separates…(Do not cover the pan,if you cover it the palak will turn black and you wont get the rich green colour)

Add in the required amount of water and mix well.Add in the fried paneer cubes and simmer the gravy for 10 min.

Add a dollop of fresh cream and mix well.

While serving add some more fresh cream.Serve hot with paratha or puri.

Saute cumin and garlic in oil...Add in onion and cook till it is golden brown..Add spice powders and tomatoes..In with palak puree and kasuri methi..Add in paneer pieces and cream..
