This is a speciality dish from kerala...Many people have their own way of making it...My mum will just cook the rice and mix it with some coconut mixture....My way of making is entirely coconuty...I cook the rice in coconut milk and mix some toasted coconut with this..Its so good..I highly recommend to try this dish....I added some peas to this,that is entirely optional....It adds a lovely colour to it..I added some sugar to this,that is because sugar brings out the natural sweetness from the coconut and make it more tasty...I served this dish with chilli paneer...But you could serve this with any spicy dish...So please try this and let me know what you think...
Ingrediants:
Basmati rice-2 cups(soaked for 30 min)
Coconut Milk-3 cups
Coconut-1 cup
Peas-1 cup
Coriander leaves for garnishing
Salt to taste
Sugar-1 tsp
Ghee-1 tblspn
Coconut Oil-1 tblspn
For Seasonings:
Cashew-2 tblspn
Raisans-2 tblspn
Garlic-6 cloves
Ginger-1 inch piece(chopped
Cinnamon(pattai)-1 stick
Pepper-1 tsp
Cumin seeds(jeera)-1 tsp
Bay leaves(brinji ilai)-1
Cardamom(yelakai)-2
Cloves(krambu)-2
Green chilli-3
Method:
In a pressure cooker add oil+ghee and heat it up..now add in all the seasoning ingrediants and fry for 1 min.
Then add in the soaked rice,peas and fry for 1 min.Add in coconut milk and 1 cup of water and bring that to boil.Season with salt and sugar.Cover and cook for 10-15 min.
In the mean time fry the coconut in a oilless pan till golden and also chop up the coriander leaves finely.
When the rice is done just add this fried coconut,coriander leaves and ghee and mix well.
Serve hot with any spicy curry...
Serving suggestion:
This dish gows extremely well with Aloo Chicken Curry , Kadai Chicken , Pepper Mushroom , Potato Chettinaad, Spicy Egg Masala
