| Aloo Paneer Kulcha |
I made this dish for dinner yesterday and I gotta tell you this, It was so soft and just melts in your mouth..Since I added potatoes in the dough it was so soft,but this is entirely optional..i used paneer in the filling,but you could use tofu also..This is a thick kind of paratha so you don’t have to use a rolling pin for rolling this,just press the dough with your hands...This is perfect for lunch box for kids,since they love paneer and potatoes..Please try this and let me know what you think..
For dough:
Wheat flour / Atta-1 cup
All purpose flour / Maida-1 cup
Potao-1 boiled and mashed
Salt to taste
Oil-1 tblspn
Warm water-as required.
For filling:
Potato-2 boiled and mashed
Tofu / Paneer-1 cup crumbled
Red chilli powder -1tsp
Garam masala powder-1 tsp
Chat masala powder-1 tsp
Coriander powder-1 tsp
Ginger garlic paste-1 tblspn
Cumin seeds-1 tsp
Coriander leaves-1 tblspn minced
Salt to taste
Lemon juice-1 tblspn
Method:
In a mixing bowl add wheat flour,All purpose flour,potato,salt,oil and combine with your hands till it forms coarse crumbs.Slowly add in warm water and knead it into a soft dough..Cover the dough with damp cloth and let it rest for 30 min.
After 30 min,divide the dough into equal portions.set this aside.
For filling,Mix potato,paneer,chilli powder,garam masala powder,coriander powder,chat masala,salt together.
Heat oil in a kadai and add cumin seeds and ginger garlic paste..Then add this filling and saute for 5 min.
Add in coriander leaves and lemon juice and switch off the flame.
Let this cool and then Divide into equal portions as per roti balls.
Take one roti ball add place the filling inside this and roll into thick roti.
Heat a tawa and place this roti in that and toast on both sides till golden.Dont forget to apply oil on both sides while toasting the paratha.
Serve hot with raita or any pickle..
