Spinach is one of the most underestimated vegetable….But I love it..I love to add spinach in anything like sandwich,stirfries and rice…
Recently I have been addicted to this recipe….This is perfect for busy morning…A really quick breakfast dish that you can whip up in any lazy morning..
I added some cheese in this which takes this simple scramble to the next level..I used Egg whites because I had some left over egg whites from my vanilla icecream recipe…You could use regular eggs..
Ok now off to the recipe…Hope you try this…
Spinach-2 cup chopped
Egg whites-from 4 eggs or you can use whole eggs
Mozzarella Cheese-3 tblspn
Olive oil-1 tblspn
Salt to taste
Pepper to taste
Heat oil in a frying pan and add spinach to it..Cook till it gets wilted and cooked..
Top it with mozzarella and set it to the side of the pan..
Pour in egg whites and start scrambling..Now mix the spinach with the eggs…
Season with some salt and pepper..
Serve it with some crunchy toast..

|add some cheese on top…|
|Set this to aside…|
|Now pour in egg whites|
|Till you get the right consistency|
