Amma makes this korma whenever she do appam for us. This is her signature dish which pairs excellent with that spongy appam. I have never seen her making this any other day other than those days.

I love to see the magic that happens in the kadai while I make or roast spices. While doing that a wonderful aroma fills the entire house and my little sister peaks her nose in the kitchen and realizes “ok there is something special today”. She always ask me “Akka what are you cooking today”. I always tell her “Ah..A special dish”.. But I never tell the name of that untill the dish is over and photos are clicked. He He..
Ok this is one of that kind of dish, here the spices are roasted and ground which gives a awesome flavour to this dish. So with no more delay, off you go to the step by step recipe with pictures.
Potato- 3 large cubed
Salt to taste
For Roasting & Grinding:
Coconut-1 cup grated
Dry Red Chilli-3
Coriander seeds / Malli-2 tblspn
Cinnamon / Pattai -1 inch stick
Fennel Seeds / Sombu / Peru Jeerakam-2 tblspn
Heat oil in a kadai, Add all the roasting ingrediants and roast till it turns dark in colour.Now allow this to cool down, Take it in a blender and make it into a fine paste.Set this aside.
Now heat 1 tblspn of oil in a kadai. Add in onions and fry for a min. Add in potatoes and fry for 3 mins. Season with salt and mix well. Pour enough water so that the potatoes are completely immersed. Bring this to boil and simmer covered for 20 mins until the potatoes are cooked.
Add the ground masala in this and mix well..Simmer this for 5-10 mins, Check for seasoning and switch off the flame.
Serve hot with roti, dosa, rice or anything. But this taste great with Appam.

|I cubed the potatoes and immersed in some cold water to avoid the potatoes turn black..|
|Ingrediants for roasting & grinding|
|take everything in a frying pan|
|and start roasting|
|untill it gets fried and roasted|
|roast till golden|
|remove it in a blender|
|and make into a fine paste|
|now saute some onions in oil|
|add in potatoes|
|season with salt|
|pour some water|
|and bring it to a boil|
|cover and simmer|
|untill potatoes are cooked|
|add in the masala|
|and simmer for a while|
|Taste best with some spongy Appam..|
