Spicy Vegetable Pilaf Recipe / Vegetable Pulav Recipe


Happy Monday Guys...Hope you are doing great and had a wonderful day..I am in a bit hurry today...My sister is pushing me to do a presentation for her school homework..So I leave you with a small introduction and straight you go to the recipe..I made this for saturday lunch and it was totally a hit in my house..I was waiting to share this post ASAP..This is a spiced up vegetable pulav which is perfect for a spice hunter like me..So hope you like it and let me know what you think..Off you go to the step by step recipe with pictures..

Preparation Time : 10 mins
Cooking Time : 40 to 45 mins
Serves : 2 to 3

Ingrediants:

Basmati Rice – 250 gms / ¼ kg / 1 cup
Carrot-1 chopped
Beans -10 chopped
Frozen Peas / Fresh Peas-1 cup
Onion-1 chopped
Potato-1 chopped
Ginger Garlic Paste-1 tblspn
Cilantro- ½ cup chopped
Mint Leaves – ½ cup chopped
Yoghurt / Curd – 1 cup
Salt to taste
Ghee or Oil-1 tblspn
Milk-1 cup

Spices 1:
Coriander powder / Malli podi-1 tsp
Chilli powder-1 tsp
Turmeric powder-1 tsp
Garam masala powder-1 tsp

Spices 2:
Cinnamon-1 small piece
Cardamom / Yelakai-4
Cumin seeds / Jeerakam-1 tsp

Method:

Soak Basmati rice for 30 mins..Drain and set aside.

Heat ghee or oil in a heavy bottom pan..I used my pressure cooker base..

Add in spices 1 ingrediants and sauté for 1 min.Now add in onions and fry for 1 min.

Now add in spice 2 ingrediants and fry for 30 sec.Now add in all the vegetables and mix well.

Add in cilantro and mint leaves and mix well.Pour in curd and give a stir.

Now add in the drained rice and mix well.Pour in 1 cup of water and 1 cup of milk(measure water and milk from the same cup you measured the rice)and mix well.Season with salt.

Bring this to a boil.Cover the pan with a lid and simmer it for 15-20 mins.

Now switch off the flame and let it rest for 5 more mins.

Fluff up with a fork and serve with raita.

Pictorial:
Take all your ingrediants..You need some milk and water for cooking the rice..
Spice 1 - Spice powders which you need
Spice 2 - Whole spices which you need
Prepare all ur veggies

wash it

chop ur herbs

heat some ghee

add in whole spices

now onions

add in ginger garlic paste

add in powdered spices

mix well

add in veggies

and mix well

add in herbs
and some curd

add in rice

and mix well

pour in 1 cup of water

and 1 cup of milk

mix well..Don't forget to add salt..

bring it to boil

cover and simmer

till done..
Serve

with some raita on the side..
