Egg Kothu Parota / Mutta Kothu Parota - Recipes using Leftover Parota

Kothu parotta is the famous street food item over here.I love this dish so much..It is a dish that you want to prepare when you have leftover parotta last night.Just tear those,add some onions and stuffs,crack open two egss mix it up and eat it(Don’t forget the spices).If you have ever seen on those street shops they will prepare like the above method,but they will pour a little of that lovely salna in it,it will give a unique taste to this dish.You could also add any chicken curry to this.

Creamy Egg Curry Recipe

Curries are one of the essential part of indian cooking.Indian food is not completely finshed with out a bowl full of Curry and Rice.Curries are basically made with chicken,vegetables or anything that are cooked in Cocount milk or Coconut paste..But Coconut is must in making any sort of curry.The curry I tried is with eggs,I made it entirely based on Coconut milk,It was so creamy and absolutely delicious.I will highly recommend everyone to try this once.I was a great party dish too,It goes well with anything,But it will great with appam or idiyappam…

Chicken 65 is a spicy dish that can be served as appetizer,snacks,Side dish etc.Do you guys know how this dish got its name…There are many stories behind this dish…Some people say that to make this dish perfect we have to use 65 ingrediants and some say that the chicken that are used in this dish is 65 days old..blah blah blah…The original thing is this dish originated in a military canteen in Chennai and as most of the soldiers, officers were from various parts of the country, to avoid language problems, they actually used a unique numbering system in the menu card/board. and this particular dish was the 65th item on that menu. so it became chicken 65..I served this dish with Egg briyani(check link for recipe).ok give this a try and let me know what you think.

Hai Everyone…Hope everyone had a great weekend.I had a calming weekend,because I spend my whole day at home…I slept and relaxed and watched my favorite shows on TV and also tried out so many good dishes….I tried Italian Pasta and Garlic bread last night(I will update recipe soon),It is possibly one of the cutest combinations in food and it cameout pretty good.Ok then coming back to todays recipe….I made this one for Saturday Lunch... As you know eggs are the one of the most versatile ingrediant in the world.You can make it in any form…Fried,Curries,Omlete,Scrambled…..But this dish is one of the exclusive menu for parties.I served this with Chicken 65(Will put recipe soon) and Onion Tomato raita(Check link for recipe)…It was absolutely delicious.So please try it out and let me know what you think.

Chilli Chicken ( Gravy Version)

Ok I am posting Chilli chicken as I promised yesterday…………..Chilli chicken is another one popular indo chinese recipe.Traditionally the chicken in this recipe is deep fried and then added in to the sauce.I made it a little different.I didn deep fry the chicken,I just sauted in some oil till they are brown and then added it into the sauce.It tasted pretty awesome.I served it with chinese fried rice(Check link for recipe)So please try it out and please please please leave comments.

 Fried Rice is a most popular dish in Chinese Cuisine.Traditionally Fried rice is made with Left over rice of the previous Day.Dont use hot rice for this because every thing will clump together while Mixing.if you want the best result cook some rice the previous day and refrigerate it and make fried rice the next day it make s the perfect fried rice or else you could do as I made.While making this fried rice just taste as you go and add more sauces or peppar as per your taste.You could make this fried rice with prawn also,then you will get prawn fried rice.If you want to make it vegetarian you could leave the eggs and chicken and make it entirely vegetarian.I served this fried Rice with Chilli chicken,I will update the recipe tomorrow.So please give it a go and let me no what you think.

Hello everyone..Hope everyone had a great Weekend.For me this weekend was really a kind of boring one.I didn do anything useful..Of course I cooked…...I made the most amazing "No Bake Cheese Cake"(One of Nigella's Recipe),But I forgot to take Photos of it,Will make it another one time and will update the recipe for you or if you are so curious of knowing the recipe,check out this link.I also cooked a few more dishes(will update the week).One of the dish which I made is this Delicious Channa Masala.I served it with Puri.Channa masala is one of the delicacy of North india.The Secret behind their channa masala is they add kasuri methi leaves,So please try to add that ingrediant(here,you can get in Lynns) it gives you the real flavour of Channa masala.So please try it and tell me how it came.

In Nagercoil there is a Hotel called Arya Bhavan,it is a Vegetarian Hotel..And they serve a Wonderful Chilli Paratha.I always order that dish when I go to that Hotel.I have tried to make that dish a couple of times but it didn workout well,but Later I found the Secret of that recipe through a show that I watched in TV.The Thing is,they deep fry the paratha dipped in a batter of maida and other spices.When I made this first time,I was amazed,it tasted like that Arya Bhavan Chilli Paratha.So please try it and please leave comments.

Egg Noodles

After posting vegetable fried rice recipe,I thought of making another popular Indochinese Dish called as Egg Noodles.This Recipe is for my crazy friend Nameeta,She asked me to post this Recipe,So Nameeta please try it tell me how it turned out.The Noodles which I used is not the maggi or any other noodles,it is plain noodles…You can get it in super markets it is very cheap.It is also called as Egg Noodles.You could add some mushroom,Tofu and any vegetable of your choice.I didn have those vegetables when I made this dish,So I didn use those..Ok Try it…And let me know what you think…

Gobi 65 ( Fried Spiced Cauliflower )

Cauliflower is one my favorite vegetable.I like it in anyform Briyani,Korma,Curries etc….But especially this Gobi 65..”I LOVE IT”.

You can have this as a Snack or even it goes extremely well with a simple Rasam Rice.Try it and let me know how it turned out.

Spicy Chicken Biryani + Tips to Avoid Whole Spices Catching in Mouth

 Last weekend I made Briyani with Chicken…I have tried making briyani many times,Each time there will be something missing in it.But last time I made the perfect briyani,After I finished making it I was so proud of myself,Yes ...the Briyani Aroma filled my house.That should happen only when you make the perfect briyani.I wrapped the Whole garam masala ingrediants in a cheese cloth so that you will get the flavours of it but wont get a bite into it (which was awful).I mixed the rice along with the masala so that the Briyani was so flavourful.I served it with Onion Tomato Raita(for recipe check this link)So please give it a try and let me know how it turned out.

 This is a simple,refreshing and cooling side dish for any Briyani’s and any Rice dishes.I don’t like the raw taste of onions in any raita,It makes raita a disaster...So I do a little trick,I steep the onion in some vinegar or Lemon Juice.It takes away the sharp taste of onion and make it milder.You could use this method in any salad preparations that calls for raw onions.Make it and enjoy it with Your Spicy Chicken Briyani(For recipe check this link )

Malabar Paratha Recipe / Kerala Parotta Recipe / How to Make Malabar Parotta

Paratha is usually called as parota over here.Here in Nagercoil there are so many parota shop,They usually serve parota  with a lovely salna,it will be so nice to have  on a rainy day.The Parata they make is entirely different there are so many methods in doing that,they will just throw the dough in air to make it thin but it doesn’t work for me.But this recipe is so simple and the parota even turns out so flaky and so soft.So every one can try it.

I served it with Vegetable Korma(For recipe Check this Link ) but you could serve it with Chicken gravy  or Salna .I had even given Step by step instructions so it will be so helpful to you.

So Just make it over this weekend and please let me know how it turned out.

Preparation Time : 30 mins
Resting Time : 4 Hours
Cooking Time : 45 sec to 1 min per paratha
Serves : 4 to 5


For Dough:
All Purpose Flour / Maida - ½ kg / 500 grams
Warm milk-300 ml
Oil - 2 tblspn + more for frying paratha
Sugar-1 tblspn
Salt to taste

For Making Paste:
Oil - 1/2 cup
All Purpose Flour / Maida - 1/2 cup


Mix every ingredients in a mixing Bowl and form a dough,cover it with a damp cloth and let it rest for about 4 hours.

In a bowl add around ½ cup of maida and pour in some oil and make it into a smooth paste and set aside.

Divide the Dough in to equal portions.

Take a dough ball and spread it into a thin chappati,Add in a tblspn of maida oil over the chappati and spread it evenly.Now with a sharp knife cut strips on the chappati,pull all the strips together and curl it into a round,Apply some oil on the dough ball and set aside on a oiled plate(See picture).Make every dough ball the same way.After that cover the plate with some damp cloth and set it aside for about 1 hour.

After 1 hour take the dough and make it to a slightly thicker Parata.

Heat a tawa on high heat and place the parata over the pan and cook the parata on both sides by applying oil till it is golden brown.

Make some 5 parata the same way,then stack them together and crush them with your both hands vigorously till the flakes separates.

Put them in a Hot case and repeat the process until everything is done.

Serve them hot with your favorite curry.

Ur ingredients
Make dough by mixing flour, salt, sugar, milk and oil.

cover it with a damp cloth and let it rest
Take flour and oil in a bowl
make it into a paste
now take the rested dough out

divide into equal balls

Take one ball and spread it thinly

spread the flour oil in this
spread it evely

cut into thin strips

take it together...

start rolling


Perfectly rolled
apply some oil over this

all done...

cover it with a damp cloth and let it rest

take one out

spread into thick roti

put it in a hot tawa

cook on both sides

take it out

start crushing
all flaky
All Done
