Crispy Paneer Fingers

This is a perfect appetizer for any parties..You could make this dish with tofu also..In the marination of the paneer you could add some lemon juice and tomato ketchup also..The paneer in this dish is crispy outside and soft inside...You could dip the paneer pieces in egg also,but I thought of making it entirely vegetarian..S I hope you all will give it a try and let me know what you think...

Hope everyone had a great long weekend..Todays recipe is gonna be calzone..For those who had not heard of this “Calzone is a folded pizza that is stuffed with your favorite veggies and baked”.This dish is originated in italy..This is pretty simple to make..Infact you could stuff some chicken filling inside and do the same..or any filling will do..As you can see I made a couple of big calzone,if you are making this for parties you could make small ones and serve as a appetizer.Traditionally the filling is cooked first and filled,But I added it raw and I liked that way(it is easy that way)...They use Marinara sauce in it but I used tomato ketchup.This makes life easier and it came pretty great...So hope you try this and let me know what you think.

How to make Cake Stand

I always wanted to buy cake stand to display my cake..But in my place i couldn't find,so i planned to make one on my own..I googled and got an idea how to make it..All you need to make this is a Sealant,Plate and a Stand..that stand can be either candle stand or old night lamp bottom piece(mine is a night lamp bottom piece) and this is how i made it..

 Like I said before I love paneer and this recipe is a addition to that.This is a lovely ginger flavoured dish.Traditionally for paneer tikka the paneer pieces are cooked in oven and it has lot of procedure..But this is a easy way of making it..I simply sauted the paneer pieces in tawa with a little oil..I promise you,it doesn’t make any difference.This recipe is adopted from Manjula’s Kitchen,and it was so good...If you are making this dish in the morning,you marinate the paneer slices the day before and keep it in fridge...and you can make this within 30 min the next day.The cornstarch I added makes the gravy thick,so you can adjust the amount of water you add in it.I served this dish with Wheat Naan(Do check the recipe,it is so easy)..Please try this dish and let me know what you think...

A healthy dish which has lots of vegetables in it that is cooked in a lovely coconut and yoghurt paste.This is a typical dish in kerala..My mum used to add turmeric powder and instead of curd,she used to add tamarind juice.But this method is so good.You could add pumpkin,cucumber and any vegetables you want,but I am not a big fan of those veggies so I used my favorite vegetables.Then try to add thick unsour curd for this.I served this with steamed rice,keralan style brinjal curry,raw banana fry,rasam,curd and papad..How perfect lunch is that..We invited our aunt for lunch,She was so amazed about this lunch.So I hope you all will give it a try and let me know what you think.

Keralan Potato Stew

Todays keralan dish is gonna be the yummy potato stew..This is one of the dish that can be prepared within 15 min.But it taste so good...You can taste the exact coconut flavour because the full curry has been cooked in coconut milk.This is one of the typical keralan dish..It has simple ingrediants in it..It meant to be a thin gravy dish,but if you want it thicker,just take some potato and mash it up,this makes the curry thicker.This dish goes extremely well with Appam,Idiyappam,Bread...If you are serving this with rice,just make some spicy dish to go along with this...I hope you all will give this a try and let me know what you think..

Ingrediants:

Potato-1 boiled and mashed
Onion-1 sliced
Green chilli-2 slitted
Curry leaves-1 spring
Ginger-1 inch piece juliened
Coconut Milk-1 cup(Thin Extract)
Coconut Milk-1 cup(Thick Extract)
Salt- to taste
Sugar-1 tsp
Coconut Oil-1 tblspn

Method:

In a kadai add oil and let it heat up.Add in ginger and fry for 1 min.

Now add in the onions,curry leaves,green chilli and fry for 3 min.

Add in the thin extract of coconut milk first and let it come up to a boil.Add in the potatoes and mix well..

Now let it cook covered for 5 min.Add the Thick extract milk and let it boil once.

Season with salt and sugar.Serve hot with rice or anything.

 I got so many request for doing kids dishes..So I am starting that series from today onwards.I will try to post dishes for kids once or twice a week.I am starting with a  easy peasy dish..Toad in a Hole,This is a wonderful dish for kids....I know every kids love oozing eggs..This is a special dish for them.I used a small round tin to cut out the centre..But if you want it really,fancy you could use a different shape cutter...Don’t over cook the eggs or else you wont get the runny egg yolk..I hope you all make this and give to your kids and definetly you will be the best mom...

Briyani is everyone’s favorite..But this one is for my vegetarian friends...It is a great food for kids since it has all vegetables...The best part in this briyani is the fried bread cubes and nuts...So try to add a lot of it..I am not using briyani masala in this..this is made entirely from scratch..Mum used to make briyani(her version is different),she used to serve it with raita,papad,tomato jam...The key thing in this briyani is fry the onions till golden brown..So please give this a try and let me know what you think..Please leave comments..

This recipe is on my list for months..I always wanted to make this dish..I got this recipe from the pioneer woman’s blog...I love Ree so much..She is a great cook and a great blogger..This pictures looks almost like a cake than a bread that is because I couldn’t find a loaf pan here..so I used a aluminium tin..So I din get the perfect bread loaf shape..who cares about the shape,this taste divine..I promise you..It was so good..We finished it that day itself..i got a slice leftover next day(lucky to have that) so I toasted it by applying some butter in that and tasted it..i should tell you that was heavenly...I highly recommend to try this bread...this bread is pretty easy to make..I cannot find cinnamon powder here so,I took some cinnamon bark and powdered it in mixi and used that..You can always adjust the amount of sugar that you add in this..please please give it a try..i am gonna do it again soon...Please make this and let me know how it came..please leave comments...

Fenugreek leaves are readily available in the market,but many of us wont choose that because of the bitter taste it has and also many don’t know how to use that...I have a little tip of taking away the bitter taste out of fresh fenugreek leaves...buy a bunch of methi leaves and chop it up,place this in a colander and salt it liberally,leave that for 30 min.after 30 min just squeeze away the water,you can use these leaves for you dishes they wont have that much bitter taste...If you are using dried leaves just soak it in water,

I love paneer,In my blog you can see many paneer recipes..But this is my favorite dish...But it is terribly easy to make..While frying the paneer try not to over fry them,if you do so the paneer will turn so rubbery..So just fry the paneer lightly...This dish can be finished within 15 min...I served this dish with coconut rice...So go ahead and try this dish and let me know what you think....

Coconut Milk Rice / Coconut Rice - Keralan Style


This is a speciality dish from kerala...Many people have their own way of making it...My mum will just cook the rice and mix it with some coconut mixture....My way of making is entirely coconuty...I cook the rice in coconut milk and mix some toasted coconut with this..Its so good..I highly recommend to try this dish....I added some peas to this,that is entirely optional....It adds a lovely colour to it..I added some sugar to this,that is because sugar brings out the natural sweetness from the coconut and make it more tasty...I served this dish with chilli paneer...But you could serve this with any spicy dish...So please try this and let me know what you think...

I love making muffins because they look good and they are easy too..and also you don’t need to find a knife to cut it..This muffin is not the sweet kind,it is a savoury version....This is adopted from one of nigella’s recipe,but I modified it to my style.the desiccated coconut in this recipe is completely optional.I used regular amul cheese for this,but you could use any cheese..The orginal recipe call for mustard but I substituted it with green chilli..Still it cameout good...This is really a simple dish just mix everything together in one bowl and bake it in muffin holders..The main thing for a lighter muffin is don’t over mix your batter,Just use a fork and mix the batter till it gets combined...So please try this and let me know what you think....

Uttapam is a variation in dosa where all the ingrediants is added into the dosa batter and then the dosa is made.Traditionally uttapam is made with lightly sour dosa batter.But if you don’t have any of that,you could make it with regular batter or just take the dosa batter out of the fridge in the morning and make this uttapam in night.You can use ghee instead of oil,so the flavour of dosa will be so good.This Dosa don’t need any side dish with it,So this is perfect for a quick breakfast.You could even make this batter in the night and use it the next day. Hope everyone is having a great weekend.This weekend I made so many dishes like Vegetable briyani,Coconut milk rice,Chilli paneer and the pioneer woman’s famous Cinnamon bread.Just now I made it and it came pretty good,it turned out so soft and tasty..will post all those recipe in the coming days.I also made gobi Manchurian,that is for today’s post..I have mentioned in one of my post that cauliflower is my favorite vegetable.I have already posted gobi 65  recipe.This is another one cauliflower dish that is a favorite of many(I KNOW .. I KNOW).Gobi machurian is a kind of Indochinese dish.It is lip smackingly good,this is one of those dish that you want to lick your fingers after eating it.I recommend you all to make the sauce first and then fry the cauliflower and also add the fried cauliflower in the sauce just before you serve,this makes the cauliflower stays a little bit crispy.So hope you all make this and let me know how it came..BYE...

Pineapple Pie with the Best Lattice Crust Ever

 This is my first attempt of making a pie..I thought of making a pineapple pie because I had a can of pineapple slices at home..But you could do this with fresh pineapple too.The sugar amount is entirely upto you,you could make it as sweet as you like.Then when baking the pineapple juices started oozing out of the pie crust,so to avoid that,you could just cut some thin slices of pineapple and lay them on the top of the filling so that the juice wont come out,BUT Still you care about the look,it tasted divine.You could exactly the same way with any filling as you like..The lattice crust I did is,I started on one side then I went to the other side,But you could just get an idea of the crust and do it to the entire dish all at once.So hope you try this and let me know what you think.

This curry is a basic chicken dish with potatoes in it.I love potatoes so much,and these simple potatoes becomes super delicious when they get cooked in yummy chicken curry..This is a typical south indian dish that goes perfectly well with rice.I added coconut paste to make this dish creamy,But if you are cooking this for parties you could add some soaked cashews to the coconut and grind it together,this will make this dish more rich.This dish is so tasty because you don’t add any additional water to this,the chicken and the potatoes are cooked in there own juices...I know most of you will make some chicken dish on Sundays and now you know what you should make this Sunday..(he he).So try this and let me know what you think...

This cake is a moist and flavourful cake with lot of raisins and grated carrots in it.I made this cake last weekend and brought to office,Everyone loved this cake. This recipe is modified from Aayi’s Recipes..You could add some chopped nuts in this cake.I used a some orange juice and zest which gives this cake a fruity tone...Since we are adding mashed up bananas,this cake stays so moist upto 3 days...You could make a frosting for this cake so that it will taste so good.The best frosting that goes with this cake is Cream Cheese Frosting. “SHARJAH” is a kind of banana smoothie,which many of you will order in restaurants...I am gonna show you the easiest way to make it from home..First step is take a banana and chop it up,put that in a plastic bag and set it in freezer a day ahead and also put a packet of milk in freezer so that it sets frozen.These steps makes your shake so creamy..Then I used hersheys chocolate syrup,but you could use drinking chocolate powder or even a tblspn or two of Boost or Bournvita...Since the milk and banana is frozen you don’t have to bother with ice cubes this keep everything smooth and creamy....I highly recommend to try this and please let me know what you think....
