Ven Pongal Recipe / Ghee Pongal Recipe / Pongal Recipe



Ven Pongal..Pongal, Sambar, Coconut Chutney & Medu Vadai..My favorite breakfast combo ever..I make this quite often atleast twice a month or thrice a month. This is my hubby's favorite combo too. If you plan to make pongal, it has to be served with coconut chutney and sambar. If you have time then please make some crispy medu vada too.

My mum loves brinjal...I mean she will do anything for it...Like Tenali Raman...Do you guys know about him..

When I was a kid my grandma used to tell me lots of stories,many of those will be Tenali Raman stories...He is a smart person in the every story,who used to do all kinds of mischiefs and escape from the king in a smart way..

His stories will be very interesting to hear and stays in our heart for so many years..Like the story which I suddenly remembered when I was writing this post..

Stir-Fried Vegetables with Coconut and Peanuts / Mixed Vegatable Thoran

 
If you have some left over vegetables lying around,Go and pick everything to make this lovely dish...This is also called as Thoran here...

But this dish is quite different, It is a Thoran with Aarthi’s Twist in it...The twist comes from peanuts and frying the coconuts..

Simple Carrot Dal

 
Dal is one of the stable of the southindians , moreover it is a stable dish in my house...But usually my mum makes it in the same way,which is by boiling the dal and making a paste of coconut and some spices and adding it to the dal...She wont even forget to make a simple tempering too...

But when I am cooking, I personally want each of my food to be unique and different..Even from the Basic dal to the complicated Malabar paratha...

Oneday mum gave a fine Saturday lunch preparation to me,which she always does during weekends...She also told me to make dal and she told me her recipe to make like that...But I never liked to make that boring dal one more day..

Pineapple Pachadi (Pineapple Cooked in a Yoghurt Coconut Sauce)

 
Today was really a busy day for me...I woke up at 6.00 in the morning,Yes that is really a unusual one,because I have never done this any day..My usual wakeup time is 7 or 7.30..Please don’t think bad about me..Somehow I couldn’t sacrifice nap’ng for anything..He He..”Everything will change after marriage”-This is the famous quote of Mum all day...

The first thing which I did is uploaded my blog..Then I logged out from my system and started my busy day.. 

Today my mum was little bit tired,so breakfast was upto me..I thought to make a special breakfast ...So I made Venpongal,Quick Sambar and some Tomato Coriander Chutney..It was totally southindian and delicious..I will post recipes soon..

After having a quick breakfast..I just refreshed myself and got ready for visiting my college friends after a year or so.We arranged for this plan a month before and today was the day..

Chicken Tikka made in Oven


Hai Friends...Hope you had a great day...

Chicken tikka is a famous dish all over India...Traditionally it is made in tandoor oven,But I made it in normal oven...It still tasted great...

The main thing you should remember is the marination of the chicken...I marinated over night so the flavour went deep into the chicken...You could let it marinate upto 2 days...

You could serve this as it is...But I made Chicken tikka masala with this and served it with rice...I will post it tomorrow...

My mum makes this chutney more that twice in a week..Because it is so simple to make..It requires only onion and nothing else..

I like to caramelize the onion and they make it into a paste..So that you can get the real sweetness of onions and it gives the chutney a nice colour..

Homemade Vanilla Icecream with Jelly


This is my mums all time favorite icecream..Whenever we go to any icecream parlour,she used to order this all time..I like to go adventurous with my food and I will order icecream’s which have weird and funny names...

Saying this I remember a story...Oneday me and my mum went to a near by icecream shop...Asusual my mum ordered jelly icecream and she got her icecream atonce and she was enjoying it...In the mean time I searched the menu card and found a icecream..Its name is Playboy and I ordered that..

Mutter Paneer (Paneer & Peas cooked in Tangy Tomato Sauce)


Ok this is my second way of making this delicious dish...This one is a little spicy and a tangy mutter paneer..

I made this one in pressure cooker since I used fresh peas...If you are using frozen u can just cook it on the kadai...Since I cooked both paneer and peas in pressure cooker,the paneer got nice flavour inside too,because you know that paneer is pretty bland right..

Sweet Corn Chowder


When I was going through Jamie oliver website,I came across this recipe and I want to try it as soon as possible..

This is the first time I tried and I am in love with it....You can have it like a soup,but I was not in a soup mood that day so I baked some fresh naan to go with this...But any crusty bread will do..

Just dip any bread in this and take one bite.......mmmm...

Do you need a soup that is packed with tons of vegetables..Then this is it...The addition of chives is entirely optional...But I think it adds a deep flavour to this...

Focaccia Bread Flavoured with Rosemary,Onions and Olives

I love making bread,specially breads which have lots of flavour like this one...This bread has a lovely fruity olive oil flavour in it..

I love to use olive oil a lot more nowadays because I feel that it is lot more healthy and has a lovely flavour in it..I have recently addicted to EVOO(extra virgin olive oil)...Yes I started saying like this after watching rachael ray shows...

And Guys have you ever watched rachael’s shows...I love her shows so much because she cook so energetic and enthusiastic..We can see a passion in her cooking and also she gives lots of tips in between cooking...If you have never watched her show before,you should do it now...

Now back to our focaccia...I flavoured it with onions,olives and rosemary because I love the sweetness of onions when it has been baked and also I found that rosemary and onions go very well together...So I throwed some in..
