Egg Buns / Buns Stuffed with Spicy Eggs and Onion Filling

This recipe is inspired from the egg puff which I had from the near by bakery. Those puffs are stuffed with spicy onion  and egg filling. Since puff pastry dough are not available in my place, I replaced it with regular bun dough.  The cool thing about this dough is you could pretty much stuff anything in it. This makes a awesome snack for kids too..

For Dough:
All Purpose Flour / Maida – 2 cups / 250 grams
Sugar – 1 tblspn
Yeast – 1 tblspn
Salt as needed
Oil- 2 tblspn
Warm Water – as needed

For Stuffing:
Onion- 2 large sliced thinly
Eggs – 3 as needed halved
Soy Sauce – 1 tblspn
Curry leaves – 1 spring
Chilli Powder -1 tsp
Salt to taste
Oil- 1 tblspn


Start by making the dough. Take warm water in a bowl. Add sugar and yeast in the water and mix well. Let it rest for 5 mins.

Now in a large mixing bowl add flour and salt. Pour in the yeast water and mix well. Drizzle some oil and let it rest for 1 hours till it doubles in size. Knock out the air and divide into equal portions. Set this aside.

Now make the filling..Heat oil and add onions,curry leaves and mix well Cover and Cook till theonion is slightly brown.

Add chilli powder and salt and mix well. Add some soy sauce and toss well. Remove this to a bowl.

Take the dough and spread it into rounds. Spoon the onion filling and egg in the center and fold from all sides.

Arrange it in a tray and cover with a cloth and let it rise for 30 mins.

Preheat the oven to 200°C / 400°F. Bake it for 25 to 30 mins.

After it is baked smear some butter on top and serve..

Take all your ingrediants
Take warm water in a bowl
add sugar
add yeast
and mix well

let it rest for 5 mins
take flour in a bowl

add salt
and mix well
pour the yeast water
and mix well
drizzle some oil
and mix well
cover and let it rise
till it doubles in size
now take ur stuffing ingrediants
boil eggs and halve it
heat oil
add onions and curry leaves
and toss well
cover and cook
untill the onions has softened
add salt and chilli powder
add soya sauce
and mix well
Take it in a bowl
now take a portion of the dough
and spread it
now its time to stuff
spoon some onions filling
then egg
spoon some more onion filling
pin it with a clove
arrange it in a buttered tray
cover and let it rise
now time to bake
add baked
apply some butter
and serve
Taste great when warm

  19. @AnonymousYees you can try it with atta..But it will be little dense. but the taste will be good. infact you can use 1/2 maida and 1/2 atta..You cannot substitute atta for every baked goodies.

    i made these buns
    i couldnt get d buns n brown color n upper layer was a crust...
    what may be d mistake..
    n how much water will approximately be needed to make d dough... i struggled a lot with d dough... The taste of the bun n the filling was super amazing..

  22. @Bala VetrivelI used around 1 cup of water, may be a little more. If you didn't get brown colour. You can bake the buns and grill the buns for a min to get nice colour.

  25. @SAndra RoseI have mentioned that in the written method. After you finished making the dough leave it to rise for 1 hour or till it doubles in size. The after folding leave it to rise for 30 mins..

    I tried this bun yesterday. Filling tasted awesome but bun was little hard and dint get fluffy.. I think reason was in dissolving yeast in water. i use bakers dried yeast. i used normal filter water to dissolve yeast. it dint get dissolved properly.. should we heat the water a bit? if yes can u tell me how much we shud heat? pls suggest.

  27. @shwetha shenoyyou have to use warm water for yeast. it shouldnot be hot or cold. it should be very warm.

  30. hi aarthi..I tried d receipe. ...after keeping the dough for one hour..I couldn't make a roll ..the dough was very sticky..though it had risen..and I followed the receipe. .too...wat could hve gone wrong
