Sweet Mango Chutney / Aam Ki Chutney / Aam Ki Chatni / Golkeri / Mango Launji


I came across through a cookbook which came as a compliment when we bought our microwave oven.  I was so tempted to try it out immediately and I did so..The result was the entire bowl got over within 5 mins..Yes my lovely family emptied the whole lot in no time..I took some portion in a small bowl and was very busy taking pictures and my caring family which includes my sister, mom and even my loving pet joe finished the whole lot before the photo shoot was over..When I realized this, I thought thank god I took some for photo shoot, I ate a spoonful of this chutney and reserved some to eat later,but believe it or not that too got over within minutes..Unlucky me..



The reason I was illustrating this whole incident is only one thing..Actually this chutney was so HEAVENLY, that is my whole point..You can have it as it is without any regrets…If you are a so generous(not like my family) you can have it in fridge and have it with roti every now and then..I hope you love this too and let me know what you think…

Ingrediants:

Raw Mango – 4 large peeled and sliced thinly
Sugar – 1 cup / 200 gms
Black Salt – 1/2 tsp
Salt – 1 tsp
Mustard Seeds / Kaduku – 1 tsp
Cumin Seeds / Jeerakam – 1 tsp (crushed)
Fennel Seeds / Saunf / Sombu – 1 tsp (crushed)
Dry Red Chilli – 2
Oil- 3 tblspn

Method:

Heat oil in a heavy bottom pan. Add mustard, cumin, fennel and dry red chilli and sauté for 30 sec.

Add sliced mangoes and mix well. Add a dash of water and cover the pan and cook for 15 min untill the mangoes are cooked.

Now open the pan and add salt,black salt and sugar. Mix well.

Cook for 10 mins untill the chutney gets thick and leaves the sides of pan.

Serve or store in air tight container in  fridge.

Take all your ingrediants
You need lovely raw mangoes

Peel em

slice them

Heat oil

add mustard

fennel

cumin

dry red chilli

mangoes

and toss well

add a splash of water

cover and cook

when it is cooked

add salt

black salt

sugar

and mix well

cook it till it gets thick

like this

Serve
