I am taking off from work starting from today. I mean, Not permanantly... I am on my wedding leave. This clearly shows I am going to sit in my house and look at the things which are going around me and get all the tension in my head. But nothing to worry, I have lots of things to do this weekend like finish my last minute shopping and to get a bridal facial to make me glow in my marriage. So this weekend is going to be pretty tight for me. But I will find some quite times in my heavy schedule to post something for you guys. I always feel blogging quite relaxing for me..I love to blog..A LOT REALLY..
Now coming to the recipe. It is actually a simple paratha, But I am going to flavour it with carom seeds and shape it in square to make it even more fancy. I am going to give a clear step by step picture to show you how to make the perfect square paratha along with a video. I love the flavour of carom seeds in my parathas. For those folks who are new to carom seeds, it has a flavour very similar to oregano, but very very strong spice. So you only need a little amount. If you add a ton of it in your paratha, It ruins the whole thing. So be stingy on it..But the cool thing is the paratha stays so soft and you have so many layers in it..

Ingrediants:
Wheat Flour / Atta - 3 cups
Ajwain Seeds / Carom Seeds / Omam - 1 tsp
Salt to taste
Oil or Ghee - 3 tblspn + for roasting and spreading while making parathas
Water as needed
Method:
Take wheat flour, ajwain seeds, salt and oil in a bowl.
Rub it with your hands so that the oil is mixed all over the dough.
Add water slowly and make the dough. Knead it for 5 mins.
Drizzle some oil over the dough and cover it with a bowl. Let it rest for 15-20 mins.
Divide the dough into equal portions.
Take one dough out and start rolling into a chapati. Drizzle a tsp of oil over the chapati.
Start folding from all sides so that it for a small folded square.
Now roll this into a larger square.
Make all the parathas like this and set aside. Now time to fry the parathas.
Heat a tawa and drop the parathas over that. Cook the paratha for 30 secs on one side. Flip over. Drizzle some oil over the top. Flip the paratha again and cook for another 30 sec. Drizzle some oil on top and flip over again. At this time the parathas will puff up a lot. Cook the paratha till they are golden on both sides.
Remove it and serve hot with raita and pickle.
