Summer has arrived and watermelons are available in abundance here..I love watermelon a lot, sometimes I am totally amazed how a massive fruit contains 98% of water stored in its fruity flesh..And in addition to this, these fruits arrive just on summer time when we need to have lots of water..God has made each and every thing in this world for a reason..Right!!

Ok I know this post is a simple one..Everyone knows how to cook paratha or roti ..But this is a little special one and gives you the softest and layered paratha..This serves well to put in lunch box as well, since it stays soft for longer time than your regular chapattis....You can serve any sidedish of your choice with this..You can refer my recipe index for the whole list of recipes…We make this often in our house and this paratha is little thicker and heavier than your regular ones..so having just one or two makes you full..

Hope you all are getting ready for celebrating pongal tomorrow..In our house we celebrate pongal very traditionally..Amma wake up and makes us to wake up so early to get ready for pongal..We will make pongal in the front of our house using a build up stone stove and using woods and dried leaves from coconut tree to lit up fire ..We call it as “Veragaduppu”..
Stuffed parathas are a life saver if you don’t have any time to cook any sidedish for roti..You can pretty much stuff it with any thing from vegetables to chicken..I have lots of stuffed paratha recipes in my blog you can check it in my recipe index or the quick menu in my side bar..

I Heart Chocolate Truffles..Well I Heart Chocolates..Its like I am addicted to chocolate and nothing can make me instantly happy except a bar or two of chocolate..When I am in a far most tension, a bar of dark chocolate will do the trick instantly and When I am in my extreme happiness a piece of milk chocolate knows what to do..Sometimes dark chocolate chips have been my munch down snack…I know there is nothing more to say about the love I have for chocolate..

I am back with another famous, mouth watering pickle from Andhra..As you know Andhra is famous for its spicy pickles, they have the perfect recipe for lime, mango and so many pickles..We had some beautiful mangoes which we plucked from the garden. Amma told me to do something with those mangoes..At that time I remembered the awesome recipe which I saw long back ago from mahanandi blog..I thought to give that a try.
This is another basic chutney to have along side for chat items..This chutney taste fantastic as a spread for sandwich or as a dip for chips. It has a sweet and sour taste, hence it is perfect to drizzle on top of samosas, bhel puri and many more.

So here you go to the recipe and let me know what you think..
Preparation Time : 10 mins
Cooking Time : 15 mins
Makes : around 1.5 cup
Dates – 1 cup / 10-12 dates deseeded
Tamarind Pulp – 4 tblspn or use a lemon size of fresh tamarind
Jaggery – ½ cup grated
Chilli Powder- 1 tsp
Cumin Powder / Jeera Powder -1 tsp
Salt to taste
Water as needed
Take everything in a sauce pan and bring it to a boil.
Simmer this for about 15-20 mins untill the dates are cooked.
Allow it to cool down and grind it in a blender to a smooth paste.
Pass this mixture through a sieve and press it with a fork to get as much pulp as possible.
Store this in a air tight container in the freezer for more than a month.
|Take all your ingrediants|
|Take Dates in a saucepan|
|add tamarind to it|
|Add enough water|
|Throw in chilli and cumin powder|
|and some salt|
|put it on heat|
|Bring it to boil|
|Simmer till cooked|
|allow it to cool down|
|Take it in a blender|
|and puree it|
|Pass it through a sieve|
|and scrape as much pulp as possible|
|you will get a lovely smooth puree|
|Enjoy with your chaat recipes|

This is a special recipe made for a special day in my life..Today……Jan 7……..7 years back….I fell in love with my fiancee..How could it not be special..We have completed 7 years of successful love..And next year this day I will be with him..I am really lucky to have such a wonderful partner, because I know so many people who has broked up their love life within a short period of time.Seeing those people, we have definitely made a milestone..I thank god for giving me such a loving one who takes care of me always..I pray that this life should last long till the end..
