I make tomato rice more often than anything else, not only because they are tasty, because they are so easy peasy to make when i have no time on hand. I make my tomato rice exactly how my mum makes it, she makes this often and serves it with potato roast and boiled egg, they are absolutely heaven.
You can use up the leftover rice for this. This makes the perfect dish to put in kids lunch box. You can even make the masala the day before and store it in fridge, then reheat it in the morning and whip up this quick dish. So off you go to the video and the recipe.

Cooking Time : 15 to 20 mins
Serves : 2 to 3
Ingredients:
Oil - 5 tblspn
Cinnamon / Pattai - 1 inch stick
Mustard Seeds / Kaduku - 1 tsp
Fennel Seeds / Saunf / Sombu - 1 tsp
Cardamom / Yelakai - 3 crushed
Curry leaves - 2 spring
Onion - 2 medium size sliced thinly
Garlic - 10 cloves
Tomatoes - 4 medium size chopped finely
Garam Masala Powder - 1 1/2 tsp
Chilli powder - 2 tsp
Turmeric powder / Manjal podi - 1 tsp
Salt to taste
Sugar - 1 tsp
Rice - 3 cups of cooked rice
Method:
Heat oil in a large kadai. Add in cinnamon, cardamom, fennel seeds and mustard seeds. Saute for 30 sec.
Now add in onions, garlic and curry leaves. Saute this for 3 mins till they turn translucent.
Add in salt, sugar and the spice powders. Saute this for 30 sec.
Now add in the chopped tomatoes and cook it for 10 mins till the tomatoes turn mushy.
Now add in the rice and toss well with the masala. Let it cook for a min till it gets nice and hot.
Serve this with raita or any sabzi.

I made two of your recipes last week - a whole-wheat version of masala buns, and sambar - both with great success that the whole family enjoyed.
Am looking forward to trying this recipe with cooked quinoa instead of rice - will let you know how that turns out. (lemon quinoa - cooked similar to the lemon rice recipe - is a favorite of ours, and we make that almost every week in an attempt to cut down on carbs from rice)

This looks really yummy!! In my non veg household, I think I would pair this with a carrot or spinach raitha and some kind of kabab or tikka. Keep going, Aarthi!
