Brinjal Bhajji / Brinjal Bajji / Deep fried Battered Brinjal

When we were little amma used to make bajji atleast once a week. She makes lots of different one like potato, raw banana, onions and stuff like that. She also makes it with brinjal just for her. She loves it so much. I wont even touch that when i was little. But oneday i tasted that bajji and really fell in love with it. If you love brinjal, you will surely love that one. The outside of that will be crispy but the interior stays soft and fluffy. I hope you will try this and let me know how it turns out for you.

Eggless Coconut Basbousa / Egyptian Coconut Semolina Cake



I came across this recipe just a few weeks ago. I have seen this in cooking shows and in many other cooking blogs. I really wanted to try this recipe, but many of this recipe has eggs in it. I wanted to try it without eggs, so modified the recipe accordingly and tried it.It came out pretty good. The taste of this was more like a firmer version of a south indian sweet called as kesari with some taste different.

Cheesy Pizza Bites Recipe

I love pizzas, i make them often a year back. But now i have slowed myself in making them more often. But i wanted to try this recipe for so many days and i made this last week. I stuffed it with cheese, olives and pizza sauce and sprinkled it with oregano  to make it even more flavourful. You can either use store bought pizza sauce, but i used homemade one. These turned so soft and cheesy. Try it and let me know how it turned out.

When i found lots of baggies of bits and pieces starting from muesli to cornflakes lying around my refrigerator. I want to use them all in one single recipe and it should be healthy, at the same time it should be yummy. I planned to make granola bars, but i didn't have honey on hand.
