I love pasta which is tossed in tomato sauce than a cream based pasta. My sister always insist me to make tomato pasta whenever i do pasta dish. Because they like that style of dish. Now lets talk about this sauce..I always wanted to post a basic pasta sauce in this blog after i shared the simple pizza sauce recipe which was years back. I wanted to add some vegetables in my pasta sauce to make it tasty and healthy..Finally i made the pasta sauce and used it in a very very special recipe which will be posted tomorrow.
Preparation Time : 10 mins
Cooking Time : 20 mins
Makes : 2 cups of Sauce
Olive oil – 3 tblspn
Onion – 1 small chopped finely
Garlic – 4 cloves chopped
Carrot – 1 medium size chopped
Bell Peppers / Capsicum – 1/2 a medium one chopped finely
Tomatoes – 4 large chopped finely
Salt to taste
Sugar – 1 tsp
Oregano – 1 tsp
Red Chilli Flakes – 2 tsp or to taste
Tomato Ketchup – 3 to 4 tblspn
Heat olive oil in a sauce pan, add in onions, garlic and saute till translucent.
Add in carrot, bell pepper and saute for a min. Add in tomatoes and mix well.
Cover this and simmer for 10 mins till everything is mixed well.
Let this cool a bit and take it in a blender and puree it, you can make it smooth or coarse.
Transfer it to the same pan and add salt, sugar, oregano and chilli flakes. Mix well..
Add in ketchup and mix well.
Now cover it simmer this for 10 mins till oil floats on top. Let it cool down before storing it in fridge in a air tight container.
1)Store this in air tight container in fridge for 4 to 5 days.
2)You can just toss cooked hot pasta with this sauce and have it or use in any pasta dish.
3) Add carrots and bell pepper is optional, you can leave it if you like.

|Heat olive oil in a sauce pan|
|Add in onions and garlic|
|Add in carrots|
|Add in bell peppers|
|Saute them together|
|Add in chopped tomatoes|
|Mix them well|
|Cover and cook|
|Till tomatoes has mushed up|
|Take all of them in a blender|
|Transfer it to the same sauce pan|
|Add in salt, sugar, oregano and chilli flakes|
|Add in some tomato ketchup|
|Mix them well|
|Cover and simmer|
|Cook till oil separates|
|Store in air tight container|
|Use it in any pasta dish.|
