Lemon Blueberry Cupcakes Recipe / Eggless Lemon Blueberry Cupcakes Recipe

I have mentioned this before itself, that hubby is not a big cake fan. To be frank he haven't tasted most of my cakes. Can you believe that. He is my biggest critic, i wanted him to taste all my foods and give a honest critic for that. And he truly does for all food, but not cakes. So i decided and came up with a plan.

Couple weeks back, i decided to try my hands on blueberry lemon cupcakes. So i called hubby and asked him to help me in this. He too came and made the entire thing.I measured all the ingredients and I stood beside him and took pictures of it. He made the batter and poured it into the muffin cases and put it in the oven. Then he was so impatient, he kept on asking me when it will be ready, i told him to wait and finally after 35 mins i took the cupcakes out of the oven and took two of the cakes from it and gave him to taste. You know what comment i got from him, "OMG IT IS JUST MELTING IN MY MOUTH, IT IS SO SOFT"

And yes this cupcakes just melt in your mouth and it has a amazing lemony flavour and taste to it. You have to try it to enjoy the taste. And one more thing, if you want your kids or even kid like hubby to eat any of their hated stuff, just ask them to help you and make it. This way they will taste it for sure..

Preparation Time : 15 mins
Baking Time : 35 to 40 mins
Makes : 20 cupcakes


All Purpose Flour / Maida - 2 cups / 240 grams
Sugar - 1 1/4 cup / 250 grams
Baking soda - 1 tsp
Baking powder - 1 tsp
Salt - 1/4 tsp
Milk - 1.5 cup + 1 tblspn of lemon juice mixed ( 375 ml)
Lemon Juice - 1 tblspn
Dried Blueberry - 1/2 cup
Olive Oil / Any Oil - 1/2 cup / 125 ml


Preheat oven to 170 degree C.

Start by mixing 1 tblspn of lemon juice in 1.5 cup of milk. 

Take a bowl and add in oil, sugar and mix well. Add in milk and mix till the sugar is dissolved completely in the milk.

Now add in flour, baking soda and baking powder. Mix well till it is completely mixed.

Add in lemon juice and blueberries. Fold gently. 

Now take your muffin tray. Line them with muffin cases.  Spray it with some oil.

Spoon the batter evenly between them.

Bake them for 35 to 40 mins till the cupcakes are done. Insert a tooth pick to see whether it is baked. If the toothpick comes out clean then the cakes are done.

Remove it and let them cool a  bit.

Serve warm with a glass of milk.


Take all your ingredients

Take oil in a bowl

Add in sugar

Mix it well

Add in milk

Keep mixing

Add in flour

Baking soda, baking powder and salt goes next

mix, mix and mix
once it is combined

add in lemon juice

Add in dried blueberries

mix well

take your cupcake mould

line your cupcake tray with muffin cases

take a scoopful of batter

pour it in

dont fill it too much
i got around 18 cupcakes and a small heart shape mould too

all baked beautifully

let them turn warm, now time to ice
you need sugar and lemon juice

take sugar in a bowl
add in lemon juice

mix well

spoon this over your warm cupcakes

  6. Aarthi i have only 6 silicone muffin moulds with me ( no tray) .Can i bake them in batches one after the other..In that case do we have to pre heat oven again? Cos it mite take sometime for the muffins to come out of the moulds before i make the next batch.

  13. Hi Aarthi, I have one basic doubt, I always try to make cakes or cup cakes but they come hard or get burnt. I have a convection oven. Is there any time specification for the preheat thing. Or we just need to wait till preheat is complete irrespective of time limit

    1. U have to preheat for 10 mins and then bake
