Eggless Banana Nut Muffins Recipe / Banana Walnut Muffins Recipe


Banana cakes, banana bread, banana cupcakes, banana muffins whatever you call them, they are my favourite. Any baked goodies with banana in them is mine. I love the flavour a lot. Adding bananas to a baked item makes it moist and it is a perfect egg substitute as well.

Specially these banana nut muffins are the easiest and fail proof recipe which you can try your hands on. You will never fail in this, each time it gives me the perfect recipe. 



This muffins makes a great breakfast..I used walnuts in these, you can use cashews, almonds, pista or anything as you wish. And you can infact use whole wheat flour instead of maida to make it healthy.

Preparation Time : 10 mins
Baking Time : 30 to 35 mins
Makes : 6 muffins

Ingredients:

All Purpose Flour / Maida - 3/4 cup / 90 grams
Sugar - 1/2 cup / 100 grams
Baking Soda / Cooking Soda - 1/2 tsp
Baking Powder - 1/2 tsp
Ripe Banana - 1 cup mashed ( I used 5 small ones)
Oil - 1/4 cup / 60 ml
Vanilla Essence - 1 tsp
Walnuts - 1/2 cup

(My 1 cup measures 240 ml)

Method:

Preheat oven to 190 degree C.

Take bananas and mash them roughly. Add in sugar, oil and vanilla essence. Mix well.

Add in flour, baking soda and baking powder. Fold gently.

Add in walnuts and fold gently.

Line a muffin tray with cupcake cases. Use a icecream scoop to fill the cases. 

Dont fill them too much, they will rise.

Top them with some walnut pieces.

Bake this for 30 to 35 mins. Insert a tooth pick to check whether it is done or not.

Now remove them from the tray and leave them to cool.

Serve warm.

Take all your ingredients


Peel some ripe bananas in a bowl


i used a fork to mash them up


now they are mashed


i measured them, i got around 1 cup of mashed banana


i added back into the bowl


add in some oil


sugar


vanilla essence


mix well, so sugar is melted


Add in flour


baking soda


baking powder


fold gently


add in walnut pieces


fold genly


I lined a muffin tray with cupcake cases


use a icecream scoop to scoop the batter


like this


fill the muffin tray


sprinkle some extra walnuts on top


baked to perfection


serve


warm muffins with a cup of milk is perfect

  2. @kalpanacupcakes are usually softer than muffins, muffins are meant to be little denser. Cupckaes usually have somekind of icing over them

  3. I have silicon muffin tray . But when I make muffin the upper portion of muffin bake well but problem is lower portion remain soft , it's not comes out clean . Then I unmould it and bake it again . Please give me suggestion.

  5. @sutapa Purkayasthait may be because of the tray as well I have found that aluminum try bakes more evenly that silicon \

    Or it may be because you are over filling your cake tin so the top gets cooked and there is no time for the bottom to get cook

  9. Hi AArthi, Would like to know while using aluminium or silicon moulds, lining up of the trays with cup cake cases is mandatory as I am going to use silicon moulds for the first time. I didnt find any issues with aluminium moulds. Thanks in advance.

  10. @Preethi Kfor silicon mould, lining with cupcakes cases is not needed, for aluminium it is must. Youcan oil or butter the mould before using. Some batter may come clean, some batter may stick
