100% Whole Wheat Bread Recipe / Wheat Bread Recipe / Brown Bread Recipe

Whole Wheat Bread are my absolute favourite. But store bought breads have maida in them and they are never made with whole wheat flour. I already have a wheat bread recipe, but this is another version which is more fluffier than that..

Preparation Time : 15 mins
Resting Time : 2 to 2.30 hours
Baking Time : 20 to 25 mins

Ingredients:

Whole Wheat Flour / Atta – 3 cup
Dry Yeast – 1.5 tsp
Salt to taste
Sugar / Honey – 1 tblspn
Butter / Oil / Ghee  – 2 tblspn
Unsour Curd / Yogurt  – 2 tblspn
Warm Water – 1 1/4 cup

Method:

Take yeast in a bowl, sprinkle sugar over it and add some warm water. Set aside for 5 mins till the yeast is activated.

Now take flour in a bowl, add salt, curd, butter in a bowl. Add in yeast water and normal water and mix well to form a dough.

Knead it for 5 mins till it is smooth. Cover it with plastic wrap and let it rise for 1 hour till double in size.

Now knead it back and shape into a log. Place it in a oiled loaf pan, cover and let this rise for 1 hour.

In the last 10 mins, preheat the oven to 220 Degree C.

Now make some slashes over it the loaf, this is optional.

Bake it for 20 to 25 mins.

Remove it and let it cool for 5 mins, now remove it and let it cool completely. Slice and serve.

Notes:

1)Activating yeast before adding is important. The yeast should turn foamy. Then add it to the flour. If the yeast didn’t foam up then dont add it to flour. The dough wont rise.

2) If you use instant yeast, then you can add it straight to the wheat flour. Dont need to activate it separately.

3)Don’t over bake it, if you do then the bread will get hard.

4)You can add honey instead of sugar.

Pictorial:
Take all your ingredients
Take yeast in a bowl
add in some sugar
now add some warm water and let it activate
see how the yeast has foamed up..
Now take wheat flour in a bowl
add in salt
add in butter, ghee or oil
Add in curd
mix well
Add in warm water
add in the yeast water
Mix well
now knead this for 5 to 10 mins till it gets smooth
just like this
brush the top with some oil
cover and let it rise
look hot it has risen
punch out the air
shape it into log like
Remove it carefully
Place it into a loaf pan
cover and let it rise
now it is all risen
make some pattern if you like
bake it

    @JAIIf your microwave has convection mode, you can use it..

    I have tried twice to make bread but doesn't came out well,as my yeast also fomed up but bread made like cake texture,plz help me

    @sandhu singhThe dough which you make should be very soft. It will give you soft bread texture

      No aarthi can we bake th bread at 200 C thats the highest temp in my oven??

    My bread rose well but turned gooey inside.. I used regular wheat aAta.. After baking should we keep in oven for 5 mins or remove immediately ? also After removing should we keep it open till cooled ? I kept it open in the oven and removed after 25 mins and covered with glad wrap while cooling down

    Only preheating temp is 220c or both preheating and baking temp is 220c

    Hi aarthi!!! On which mode do you bake in the oven? I bake at the mode which has a fan with a circle around it. But the problem is my outside bakes in 15 minutes ,but inside is still raw. So i allow to cook till 30 minutes,but by that time the outside is stony hard. What do i do?

      You have to bake in two coil on mode. You have to tent with foil loosely if the outside it getting hard.
