I enjoy salads for lunch often, these days are too hot to have hot meals. So i enjoy a bowl of cold salad or smoothies for lunch. I made this couple days back and enjoyed it to the core. I love the sweetness from beets with the tanginess from the lemon in this.

Preparation Time : 5 mins
Soaking Time : 2 hours
Serves: 2 to 4
Beetroot – 1 large peeled and grated
Yellow Moong Dal / Pasi Paruppu – 1/2 cup
Onion or Shallots – 1/4 cup chopped finely
Coriander leaves – 2 tblspn chopped finely
Lemon Juice – 1 to 2 tblspn
Salt to taste
Green Chilli – 1 chopped finely
Wash and soak moong dal in a bowl for 2 hours.
Take all the ingredients in a bowl, add in drained moong dal and mix well.
|Take yellow moong dal in a bowl and wash it well|
|soak it in water for 2 hours|
|Now take your ingredients|
|peel off the skin from beetroot|
|chop other ingredients as well|
|take beet in a bowl|
|add onions and chillies|
|add the drained moong dal|
|add lemon juice|
|add coriander leaves|
