Amma’s Varutharacha Urulai Kilangu Korma / Potatoes Cooked in Roasted Coconut Gravy – Best Combo for Appam

Amma makes this korma whenever she do appam for us. This is her signature dish which pairs excellent with that spongy appam. I have never seen her making this any other day other than those days.
How could I not add this in my blog, I was asking amma the recipe and one fine day amma made appam with curry and I clicked photos of that. If you are wondering about the recipe of appam, Its for my next post.So wait for it.

I cook lots of continental and western foods, but there is some kind of joy which clings to me when I prepare traditional foods from my house. Yes we have lots of tradition in our house, everything comes around food. He He..
I love to see the magic that happens in the kadai while I make or roast spices. While doing that a wonderful aroma fills the entire house and my little sister peaks her nose in the kitchen and realizes “ok there is something special today”. She always ask me “Akka what are you cooking today”. I always tell her “Ah..A special dish”.. But I never tell the name of that untill the dish is over and photos are clicked. He He..
Ok this is one of that kind of dish, here the spices are roasted and ground which gives a awesome flavour to this dish. So with no more delay, off you go to the step by step recipe with pictures.
Ingrediants:
Onion-1 sliced
Potato- 3 large cubed
Salt to taste
Oil-1 tblspn
For Roasting & Grinding:
Coconut-1 cup grated
Dry Red Chilli-3
Coriander seeds / Malli-2 tblspn
Cinnamon / Pattai -1 inch stick
Fennel Seeds / Sombu / Peru Jeerakam-2 tblspn
Oil-1 tblspn
Method:
Heat oil in a kadai, Add all the roasting ingrediants and roast till it turns dark in colour. Now allow this to cool down, Take it in a blender and make it into a fine paste.Set this aside.
Now heat 1 tblspn of oil in a kadai. Add in onions and fry for a min. Add in potatoes and fry for 3 mins. Season with salt and mix well. Pour enough water so that the potatoes are completely immersed. Bring this to boil and simmer covered for 20 mins until the potatoes are cooked.
Add the ground masala in this and mix well..Simmer this for 5-10 mins, Check for seasoning and switch off the flame.
Serve hot with roti, dosa, rice or anything. But this taste great with Appam.
Pictorial:
Take all your ingrediants
I cubed the potatoes and immersed in some cold water to avoid the potatoes turn black..
Ingrediants for roasting & grinding
take everything in a frying pan
and start roasting
untill it gets fried and roasted
roast till golden
remove it in a blender
and make into a fine paste
now saute some onions in oil
add in potatoes
season with salt
pour some water
and bring it to a boil
cover and simmer
untill potatoes are cooked
add in the masala
and simmer for a while
done done..
Serve
Yummy right….
Taste best with some spongy Appam..

THis looks delicious!! Did you put the chili pods into the blender whole, seeds, stems and all? Is this very spicy?

Dottie..Thanks for your comment..Yes I added every part of the chillies in..If you wish you could deseed it and add..you can reduce the amount of chilli as per your taste.I

I made it little spicy for me..And also the spiciness depends upon the chilli which you use..Some are spicier and some are milder. You can adjust as per your taste.
