    Banana & Oat Bran Muffins Recipe

    This is one of the healthy muffins which are baked using oats bran. There are two types of bran, one is a oat bran and another one is wheat bran. They come from the outer husk of the oat and bran. If you find them in your supermarket, just make sure you stock them. they will be available in the cereal section of your supermarket.

    You can make muffins out of them, add them to paratha dough, add them to your oatmeal or cereal as well..You can even add them to your milkshakes or smoothies..Such a healthy one..These muffins are perfect for breakfast, this with a cup of milk is just filling. This muffins has only 1 tblspn of oil and it has no flour in it. It is made only with oat bran and it has bananas in them which makes it moist. so you can enjoy many with out any guilt.

    Ingredients for Banana & Oat Bran Muffins

    • Oat Bran - 1 cup / 150 grams
    • Ripe Banana - ¾ cup mashed ( one large banana )
    • Sugar - 3 tblspn
    • Honey - 3 tblspn
    • Milk - ½ cup  / 120 ml
    • Baking Powder - 1 tsp
    • Salt a pinch
    • Oil - 1 tblspn
    • (My 1 cup measures 240 ml)

    How to make Banana Oat Bran Muffins

    1. Preheat oven to 220 Degree C. Line a 6 cup muffin tray with cupcake cases and set aside.
    2. Take banana in a bowl and mash it roughly with a fork.
    3. Add in oil, sugar, honey, milk and mix well.
    4. Now add in oat bran, baking powder and salt. Mix really well but dont over mix.
    5. Now use a ice cream scoop to scoop the batter and fill the muffin cases.
    6. Bake for 14 to 17 mins.
    7. Remove it and let it cool down.
    8. Serve warm.

    Ingredients

      This is a great muffin. If I dont have oat bran can I powder the regular cooking oats and use instead? Will the resulting muffins be as delicious as this?

      i want to make these for my father. i feel he is gluten intolerant but he wont' stop eating gluten laden treats. thank you so much, i would be so happy if you could post something like gluten free chapatis, i don't know how to make them.

      @ranjiOat bran is available in super markets. u cannot make it at home

      @AnonymousYou can get muffin cases online. And silicon muffin mould can be used, but it result in soggy muffins. Aluminium or nonstick is best

      My oven only has a max of 200 degree C ..This recipe calls for 220 degree c preheat.Pl suggest Aarthi

      @Anonymousbake it at 200 degree C. increase cooking time if the muffins were not baked in the mentioned time

      Hi Aarthi, I made this recipe. It was delicious but i made it as a cake so it was quiet flat but still completely cooked and so delicious. I used less honey and sugar but still came out perfectly sweet, must be due to the over-ripe bananas. I just had a query, do you think the oat bran is gluten free? i bought baggry's oat bran, what kind have you used?

      The bragry's oat bran is more like grainy small pearls. My muffins felt like crunchy pakoras because of the texture. Didyou powder the oat bran?

      Just took these out of the oven. My son had one and said "you can make these again" and grabbed his second one. Guess I'll need to double the recipe next time. Thanks for sharing this great recipe.
