Hope you will give this a try and let me know how it turns out for you..
Oat Bran – 1 cup / 150 grams
Ripe Banana – 3/4 cup mashed ( one large banana )
Sugar – 3 tblspn
Honey – 3 tblspn
Milk – 1/2 cup / 120 ml
Baking Powder – 1 tsp
Salt a pinch
Oil – 1 tblspn
(My 1 cup measures 240 ml)
Method:
Preheat oven to 220 Degree C. Line a 6 cup muffin tray with cupcake cases and set aside.
Take banana in a bowl and mash it roughly with a fork.
Add in oil, sugar, honey, milk and mix well.
Now add in oat bran, baking powder and salt. Mix really well but dont over mix.
Now use a icecream scoop to scoop the batter and fill the muffin cases.
Bake for 14 to 17 mins.
Remove it and let it cool down.
Serve warm.

This is a great muffin. If I dont have oat bran can I powder the regular cooking oats and use instead? Will the resulting muffins be as delicious as this?

@Anonymousi dont think you can use powdered oats, since this has no flour content in them
@ranjiOat bran is available in super markets. u cannot make it at home
@AnonymousYou can get muffin cases online. And silicon muffin mould can be used, but it result in soggy muffins. Aluminium or nonstick is best

My oven only has a max of 200 degree C ..This recipe calls for 220 degree c preheat.Pl suggest Aarthi
@Anonymousbake it at 200 degree C. increase cooking time if the muffins were not baked in the mentioned time
Hi Aarthi, I made this recipe. It was delicious but i made it as a cake so it was quiet flat but still completely cooked and so delicious. I used less honey and sugar but still came out perfectly sweet, must be due to the over-ripe bananas. I just had a query, do you think the oat bran is gluten free? i bought baggry's oat bran, what kind have you used?
@Coral cruei think that oats bran is gluten free. But some kind may have gluten
The bragry's oat bran is more like grainy small pearls. My muffins felt like crunchy pakoras because of the texture. Didyou powder the oat bran?
@Ekta Vermano once u add it to the wet mix it will get soft
Just took these out of the oven. My son had one and said "you can make these again" and grabbed his second one. Guess I'll need to double the recipe next time. Thanks for sharing this great recipe.
