You know i love cooking with brinjals since mum is crazy about it. I love experimenting with it. Oneday when i browsing for brinjal recipes in google. I came across this one and instantly fell in love with it. Immediately i tried it and it was yum. Mum loved it too.
I used green long variety of brinjal but you could use anything. Because of the constant tossing and cooking, the brinjal is cooked to crispy perfection with a yummy besan masala coated all over it. So try this and let me know how it turned out.

Ingredients:
Brinjal – 1 large (Green or Purple)
Salt to taste
For Aromatic Powder:
Gram Flour / Kadalai Mavu / Besan – 3 tblspn
Dry Red Chilli – 2 or 3
Cumin Seeds / Jeerakam – 1 tsp
Sugar – 1/2 tsp
Turmeric Powder / Manjal Podi – 1/2 tsp
For Seasoning:
Oil- 2 tblspn
Mustard Seeds / Kaduku – 1/2 tsp
Cumin Seeds / Jeerakam – 1/2 tsp
Urad dal / Ulundu Paruppu – 1/2 tsp
Garlic – 3 cloves chopped
Method:
Take a small mixer or a spice grinder and add the ingredients given for powdering in it. Powder it finely and set aside.
Heat oil and crackle in all the seasoning ingredients and saute for a min.
Now add in the sliced up brinjal and mix well with the oil Season with salt and keep cooking them till it little golden.
Now add in the aromatic powder as needed and mix well.
Keep cooking and sauteing till the gram flour in the powder cooks and smells nutty.The powder will get toasted and brown and coats the brinjal pieces.
Once it is cooked remove to a bowl.
Serve with rice.

sprinkle in salt and mix well |

once it is browned and cooked |
sprinkle the aromatic powder |
mix well |
saute till it smells heavenly |
keep cooking |
