Chettinad Mushroom |
Mushroom is my favorite vegetable …I love it any time,Especially this dish is so good….This is really a spicy dish..if you love spice this is for you..Chettinad is a lovely cuisine..The spices they use are fresh and it is toasted first to bring the aroma and then used..That what make this really super…I served this dish with lacha paratha….So please try this dish and let me know what you think…
Onion-1 chopped
Mushroom-1 packet chopped
Tomato-1 chopped
Mustard seeds(kaduku)-1 tsp
Cumin seeds-1 tsp
Salt to taste
Oil-2 tblspn
Curry leaves-1 spring
Spices:
Red chilli-3
Urad dal(ulunda paruppu)-1 tblspn
Channa dal or roasted channa dal(kadalai paruppu)-1 tblspn
Cumin seeds(jeerakam)-1 tsp
Coriander seeds(malli)-1 tblspn
Pepper-1 tsp
Method:
Dry roast the spices till golden.Remove them and let them cool.make a fine powder out of it.
In kadai add oil and crackle some mustard and cumin seeds.Add in onions and mix well.
Throw in the curry leaves and give a stir.Add in mushroom and cook till done and the water that is leached out of the mushroom gets dried out.
Now add in tomatoes and mix well.Season with salt.Add a tblspn or two of the powdered spices to this and mix well.Cover and simmer it for 2-3 min.
Serve hot with chappati or rice.

Hi Aarthi..I have a query..how long can we store the roast and ground spices mix..and how to store them(refridgerate/freeze)?

@Kalai Satzu can store it in a air tight container for many days. u can keep it in fridge
