Chinese Style Chicken Fried Rice

Chicken Fried Rice

 Fried Rice is a most popular dish in Chinese Cuisine.Traditionally Fried rice is made with Left over rice of the previous Day.Dont use hot rice for this because every thing will clump together while Mixing.if you want the best result cook some rice the previous day and refrigerate it and make fried rice the next day it make s the perfect fried rice or else you could do as I made.While making this fried rice just taste as you go and add more sauces or peppar as per your taste.You could make this fried rice with prawn also,then you will get prawn fried rice.If you want to make it vegetarian you could leave the eggs and chicken and make it entirely vegetarian.I served this fried Rice with Chilli chicken,I will update the recipe tomorrow.So please give it a go and let me no what you think.


Ingrediants:
Boiled Basmati Rice-3 cups
Chicken-1 cup chopped(Boneless)
Onion-1 chopped
Carrot-1 chopped
Capsicum- 1/2 chopped
Baby Corn-3 chopped
Green Chilli-2 slitted
Eggs-3
Tomato Sauce-1 tblspn
Soya Sauce-1 tblspn
Chilli powder-1 tsp
Ginger Garlic paste-1 tblspn
Peppar-1 tblspn
Salt to taste
Sugar-1 tsp
Ajinomoto-2 tsp
Vinegar-2 tsp
Spring Onion-for granishing
Oil-1 tblspn
Method:
Soak the Rice for about 30 min and cook it till it is 95% cooked by Draining Method..Then Spread it on a tray and let it cool.
Microwave or blanch the vegetables till they are cooked.
In a Wok add oil and let it heat till it smoke.Add in the Ginger garlic paste,onion,Green chilli and cook for 1 min.
Now throw in the chicken and  cook till it is no longer pink.
Add in the red chilli powder(You could use red chilli paste) and mix well.
Add in the egg and scramble the egg in high heat.Now throw in the cooked vegetables, Peppar ,Vinegar and mix well.
Add in the Ajinomoto,Salt and Sugar to taste.
Pour in half of the Soyasauce,Tomato Sauce and give it a stir.Add in the Boiled Rice and toss every thing well.
Add the remaining Soya Sauce over the rice and mix well.
Garnish with Spring onion and Serve hot.

Saute garlic,ginger,onions,chilli,chicken in oil..Add spice powders and eggs…Now add in veggies,pepper and mix well
Add vinegar,ajinomoto,tomato ketchup,soya sauce…throw in the rice and toss well

    Hi..I love looking at ur recipes for 1 amazing reason which is, you give the pictorial part as well for all ur recipes and that is so very helpful.     I am not very fond of cooking but your website is an inspiration..I tried this recipe and it came out very well…as I was not comfortable with with using ajinomoto, I cooked the rice in some left over chicken stock and it was delicious…thanks������

    What has happened to your site???.It used to be much nicer before and with step by step pictures gave so much of confidence to even the novices to cook…I prefer the old site!…bring it back plllease!
