Cinnamon French Toast with Poached Plums Compote

I am kind of obsessed with french toast. I can never have enough of them. This one is a addition to my french toast collections and it is soooo good. i can never stress on the that more. The combo of cinnamony french toast with the sweet poached juicy plums is perfection. This is one of nigella lawson’s recipe and it is irresistable.

Preparation Time : 5 mins
Cooking Time : 20 to 25 mins
Serves: 1 to 2


Ingredients:


For French Toast:
Bread Slices – 2
Butter – 2 to 3 tblspn
Eggs – 1
Cinnamon Powder – 1 tsp
Milk – 1/4 cup

For Poached Plums:
Sugar – 1/2 cup
Water – 1 cup
Plums – 6 to 10

Method:

Start by making the poached plums, take sugar and water in a pan, bring it to a boil. Add in halved plums cut side down and let it simmer for 5 mins, flip over and let it simmer for another 5 mins. Now turn off the heat and set aside.

Take egg, cinnamon and milk in a bowl and mix well. 

Take bread slices and dip them in the milk mix on both sides so it can absorb.

Heat butter in a pan, fry the bread slices till golden brown.

Drain and serve with poached plums.

Pictorial:

take your plums, choose firm big plums

cut them in half

take sugar in a sauce pan

add water

simmer till sugar melts

place plums in it, cut side down

now simmer this

simmer for 5 mins

flip over

simmer for another 5 mins

now it is done

Take egg in a bowl

add cinnamon

add milk

whisk well

dip bread slices in them

turn over to coat

heat butter in a pan

place the bread slices in it

cook till golden

drain

serve with plums
