Coconut Chicken Roast Recipe / Keralan Coconut Chicken Recipe

Chicken and coconut makes a great combo. They taste so heavenly, when made into a perfect dish. I made this into a simple roast with simple ingredients and it turned out to be perfect. Loved it so much. 



Preparation Time : 10 mins
Cooking Time : 50 mins to 1 hour
Serves : 2 to 3


Ingredients:

Chicken – 1/2 kg bone in
Onion – 2 large sliced thinly
Green Chillies – 3 slit
Curry Leaves – a sprig
Coconut – 1/2 cup finely grated
Ginger Garlic Paste – 1 tblspn
Garam masala powder – 1 tblspn
Chilli powder – 2 tsp
Turmeric Powder – 1 tsp
Salt to taste
Coriander Leaves – 2 tblspn finely chopped


For Seasoning:
Fennel Seeds / Saunf / Sombu – 1 tsp
Cinnamon stick – 1 small
Black Cardamom – 1
Green Cardamom – 3
Oil – 3 to 4 tblspn


Method:

Heat oil in a kadai. Add in all the tempering spices and saute it for 30 sec.

Add in onions, green chillies, curry leaves, salt and saute till it gets light golden.

Add in ginger garlic paste and saute for a min.

Add in the spice powder and saute for 30 sec.

Now add in chicken and coat it in the spice powders. Add in 1/2 cup of water and mix well

Now cover the kadai with a lid and simmer the flame and cook for 30 to 35 mins. The water from the chicken will come out and cook the chicken.

Now open the lid and add in the coconut and mix well. Now keep roasting the chicken on a high flame till the chicken and coconut is nicely coloured and roasted.

Now add in coriander leaves and mix well.

Serve.
