Creamy Sweet Corn Soup Recipe

Sweet Corn Soup, my all time favourite soup apart from hot and sour soup. They are so comforting. I make them so many different ways, this is a basic creamy version. Will share a restaurant style version soon.

I used one whole corn to make this soup and it turned out delicious. Normally in restaurants they use cream style corn to make this soup, will soon share that version soon. Untill then keep checking it.

Preparation Time : 5 mins
Cooking Time : 25 to 30 mins
Serves : 4 to 5


Ingredients:

Sweet Corn – 1 cooked
Butter – 1 tblspn
Garlic – 1 fat clove grated
Onion – 1 medium size chopped finely
Water as needed
Salt to taste
Pepper to taste
Sugar – 1/2 tsp
Green Chilli – 2 chopped finely
Vinegar – 1 tsp or to taste
Spring Onion a handful finely chopped
Cornflour / Cornstarch – 1 tsp


Method:

Take sweet corn and remove the kernels using a knife. Now reserve few spoons of whole kernels in a small bowl. Take the remaining corn in a blender and make it into a fine puree. 

Heat butter in a pan, add in garlic, onions and saute till translucent.

Add in pureed sweet corn and water. Cook for 10 to 15 mins.

Now add in green chillies, whole corn and cook for further 5 more mins.

Now add in salt, sugar, pepper and vinegar. mix well.

Take cornflour in a bowl, add in some water and mix well. pour this into the soup and mix well.

Add in spring onions and mix well.

Serve hot.

You need a sweet corn..This is already boiled and ready to eat corn…if you only have fresh ones, remove the kernels and cook them first in a pressure cook for 5 whistles

Use a knife to remove the kernels

I removed few spoons to add it to the soup as whole
i took the others in a blender
made it into a smooth puree
Take your other ingredients
First start by melting down some butter
once the butter is melted add in some grated garlic
add in onions
saute till it gets translucent
add in the pureed corn
pour over some water
mix the really well and cook down for 15 mins or so
Now the soup is cooked
now start adding the ingredients..first add in chillies
now add in salt and sugar
add in corn kernels
Cook this for 5 mins or so
add in pepper
vinegar
mix well
I took some cornflour
add some water and mix well
pour that into the soup
mix well
finish with a handful of chopped spring onions
mix well
serve

    Which is the best time to have a soup breakfast, lunch or dinner. Can we take it alone or need any accompaniment

    @kalai vaniu can have this soup as it is..if you want to make it as a meal have with some starters or a sandwich
