Beetroot Muffins Recipe

Healthy and nutritious beetroot muffins which is made using wheat flour. This muffin is a great way include beetroot in your kids diet. This makes a great breakfast option.
Ingredients
  • Raw Beetroot - ½ cup (120 ml) pureed
  • Sugar - ½ cup to ¾ cup (100 grams)
  • Egg - 1
  • Oil - ¼ cup (60 ml)
  • Wheat Flour - 1 cup (120 grams)
  • Baking soda - ½ tsp
  • Baking powder - ½ tsp
  • Flax seeds - 1 tblsp
(MY 1 CUP MEASURES 240 ML)
Instructions
  1. Preheat oven to 180 degree C. Line muffin pan with cupcake cases and set aside.
  2. Take beetroot puree, egg, oil, sugar in a bowl and mix well.
  3. Add in wheat flour, baking powder and baking soda and fold gently.
  4. Add in flax seeds and fold gently.
  5. Spoon this into muffin cases and bake for 20 to 25 mins.
  6. Remove and cool completely.
  7. Serve.
