An easy and quick recipe which you can make with brinjal. These pan fried brinjal pieces are so tasty with some hot rice and dal.
  • Eggplant - 1 large cut into slices
  • Salt to taste
  • Turmeric Powder - 1 tsp
  • Chilli Powder - 1 tsp
  • Rice Flour - 2 to 3 tblsp
  • Mustard Oil as needed for frying
  1. Take brinjal slices in a bowl, add salt, turmeric powder, chilli powder and mix well.
  2. Heat mustard oil in a pan, pan fry brinjal pieces till golden brown.
  3. If you want crispy brinjal, add some rice flour to the brinjal and then fry.
  4. Serve with rice and dal.
