Carrot Raisin Muffin Recipe

A very straight forward and simple muffin recipe which has raisins, carrots and cinnamon in it which makes it super flavourful and delicious.
Ingredients
  • Egg - 1
  • Sugar - ½ cup (100 grams)
  • Vanilla Extract - 1 tsp
  • Milk - ½ cup (120 ml)
  • Oil - 4 tblsp
  • All Purpose Flour / Maida - 1¾ cup (210 grams)
  • Baking Powder - 2 tsp
  • Salt - ½ tsp
  • Carrot - 1 large grated
  • Raisins - ½ cup
  • Cinnamon Powder - 1 tsp

Instructions
  1. Preheat oven to 200 degree C.
  2. Grease 6 cup nonstick muffin pan with oil and set aside.
  3. Take egg, sugar, oil, vanilla, milk in a bowl and whisk till smooth.
  4. Take flour, baking powder and salt. Fold gently.
  5. Add carrot, cinnamon and raisin and fold gently.
  6. Scoop the batter into the muffin mould till it comes to the top.
  7. Pop this in preheated oven and bake for 20 to 25 mins.
