Baba Ganoush Recipe. Delicious eggplant dip flavoured with tahini, lemon and garlic which makes a perfect dip for your chips or had with some pita bread.
  • Eggplant - 1 large
  • Tahini - 2 tblsp (Recipe here)
  • Lemon Juice - 1 to 2 tblsp
  • Garlic - 2 cloves chopped
  • Coriander Leaves - ½ cup
  • Olive Oil as needed
  • Salt to taste
  1. Wash and pat dry eggplant. Roast them on open flame till it is charred. Remove and cool it down. Peel off the skin and cut into small pieces.
  2. Now take tahini, lemon juice , salt, garlic and coriander in a blender and whiz till smooth.
  3. Add eggplant and pulse once.
  4. Remove to a bowl, drizzle with olive oil and serve with pita chips.
