Egg Fried Rice – Lunch Box Ideas / Leftover Rice Recipes

Something makes me so energetic when I feel there is just one day for weekend. YAY YAY..How many of you agree with this? I have to plan something for this weekend, some outings or some eatings…Lets see what we come up with..

Now back to the recipe..This is a great recipe to use left over rice, I made this last week for my friends and served it along with gobi manchurian. I also made caramel custard for desert. They totally enjoyed the meal.  

Now off you go to the recipe.

Ingredients:
Basmati Rice – 3 cups Cooked ( You can use any rice)
Eggs – 3
Onion – 1 sliced thinly
Ginger – 1 tblspn minced
Garlic – 1 tblspn minced
Carrot – 1 large cut julienned
Beans – 10 chopped finely
Peas – 1 cup ( I used frozen)
Salt to taste
Sugar – 1 tsp
Soy Sauce – to taste
Black pepper – to taste
Oil – 1 tblspn
Coriander Leaves / Cilantro for garnishing
Method:
Heat oil in a large wok on a high heat.
Add ginger and garlic. Saute this for a min.
Add in sliced onions and saute for a min.
Add in carrot, beans and peas and mix well. Cook this for  5 mins.
Season with salt and sugar.
Now move the vegetables to the side and make a well in the center.
Pour the eggs in the middle and scramble it with a spoon.
When the eggs are scrambled mix it with the veggies.
Now add in the cooked rice and toss well with the vegetables.
Drizzle some soy sauce and pepper powder all over the top and keep mixing.
Taste to see whether you need anything else to be added.
Throw in lots of cilantro and mix well.
Serve hot.

Take all your ingrediants
Cook some rice and leave aside to cool

Take a huge wok and heat it with a tblspn of oil..LET IT SMOKE

add ginger and garlic
throw in the onions
and some chopped vegetables
saute lightly
add salt and sugar and mix well
make a well in the center
and throw in your eggs
start scrambling the eggs
till they are scrambled
like this
add in your rice
and stir well
pour some soy sauce in
and some black pepper
finish with a handful of cilantro
Serve
