Eggless Caramelized Fig Ice Cream Recipe

I know it is cold winter season. But i wanted to share this delicious ice cream which i made few weeks back. It has been sitting on my draft ever since. So i decided to post it now..

You know i love to eat ice cream anytime of the year, even it is cold, i like to pour some hot fudgy chocolate sauce or warm salted caramel sauce over a bowl of cold cold icecream and enjoy it all by myself, please raise your hands if you are like me, please make me feel comfortable..

Preparation Time : 10 mins
Cooking Time : 30 mins
Freezing Time : 12 to 15 hours
Makes : around 1 liter


Ingredients:

Milk – 500 ml
Cream – 1 cup / 240 ml
Vanilla Essence – 1 tblspn
Sugar – 1.5 cup
Cornflour / Cornstarch – 2 tblspn

For Caramelizing Figs:
Figs – around 15 to 20
Sugar – 1/2 cup
Water – 4 tblspn

Method:

Chop figs into fine pieces. Set aside.

Start by caramelizing the figs. Take sugar and water in a pan and mix well. Heat it till sugar is melted. Bring it to a boil and cook till sugar is well caramelized. 

Once it turns nice and golden, add in figs and mix well in the caramel. Cook till figs get soft and well coated. Remove to a bowl.

Now take cornflour in a bowl and add in few tblspn of milk. Mix well and set aside.

Take milk in a pan, add in sugar and mix well. bring it to a boil.

Once it boils, simmer the flame and add in cornflour mix in. Keep whisking.

Now the mix will get thick.

Take this off the heat and pour this over the figs, add in cream and whisk really well.

Now add in vanilla essence nad mix well.

Cool this mix, pour this into freezer safe container and store it in freezer for 4 to 6 hours. Once it is semi set, take it in a blender and blend it till it gets frothy and creamy. Pour this back into the bowl and freeze for another 4 hours. Repeat the process for another 2 times. This makes this icecream really creamy.

Finally once it is frozen, scoop the icecream using a scoop and serve.

Take all your ingredients
First wash the figs
remove the top off
cut it in half
chop it up
now take sugar in a pan, add a splash of water
mix well till sugar melted
put it on heat and bubble up
cook till the sugar is well caramelized
add figs in
toss well in caramel
now mash it roughly it is well mixed up
now the figs is all browned up
done
remove to a bowl
Now take cornflour in a bowl
add a splash of milk
mix well
Now take sugar in the same pan
add in milk
bring it to a boil
once it boils, add in cornflour mix in
use a whisk to whip it up
now it has thickened up
done
pour this over the figs
mix well
add in vanilla
mix well
add in cream
whisk well
done
pour it in a freezer safe container
time to Freeze
cover with a tight lid and freeze
Once it is half frozen, scoop it in a blender
puree till smooth
pour it in the same bowl
freeze again..Repeat this process two more times, so the icecream gets all creamy
Scoop and serve
