Jam cake was on my mind for quite a long time, i have tasted it in bakeries and wanted to recreate it at home. Finally couple days back i made it and it was a huge success. I used a simple eggless cake recipe and it turned out so melt in mouth softness..
I made it as two layers and sandwiched the both with some jam and dusted the top with some icing sugar. It was simple, elegant and tasty.
I used my homemade papaya jam for this, but you can use any of your favourite jam for this..My strawberry jam will be perfect for this too..Give this a try and let me know how it turns out for you..

All Purpose Flour / Maida - 3 ¼ cup / 420 grams
Sugar - 1 cup / 200 grams
Baking Powder - 2 tsp
Oil - 1 cup / 240 ml
Vanilla Essence - 2 tsp
Milk - 2 cup / 480 ml
Jam - ¾ cup (any jam as you like)
Icing Sugar as needed for dusting
(My 1 cup measures 240 ml)
Method:
Preheat oven to 180 degree C. Oil two round baking pan, dust it with flour and tap off the excess. Set this aside.
Take flour, sugar, baking powder in a bowl and mix well.
Add in oil, milk, vanilla and mix well to a smooth batter.
Pour this into the prepared pan and bake for 35 to 45 mins till done.
Remove it from oven and let it cool completely.
Now invert it to a cooling rack or plate.
Sandwich the two cakes with some jam and dust the top with icing sugar.
Serve.

Invert it to a plate |
Now put a healthy dollop of jam over it |
spread it out |
Sandwich with the other cake |
Dust the top with icing sugar |
