Eggless Mango Cheese Cake ( No Bake, No Cream Cheese, No SpringForm Pan, No Eggs) – Celebrating my 600th Post

I cannot believe that I am telling you this..YES my little blog has 600 recipes now..YAY!!! You don’t know how excited I am, I just can’t believe this still..I can see that how much I have cooked in these many days. And one more thing which I wanted to tell you is, I love blogging and cooking..

I want to celebrate this special day with a special post. So I am giving you a very simple, but very yummy and spectacular recipe..It is a No Bake Eggless Mango Cheese Cake..Are you wondering that you can’t find cream cheese in your place so you cannot make this recipe, no worries, this recipe doesn’t need cream cheese..YES how cool is that..I cannot find cream cheese in my place too..
Do you think that you need spring form pan to make cheese cake these many days..Then please change your thoughts. I don’t own a spring form pan. You need to prepare your basic round pan accordingly so that it acts like a spring form pan. It takes a bit of time, but it is totally worth it.
This recipe is so special to me..Because I tried this for the first time, and I can make it close to perfection. The taste was sooooo good, my totally family digged in to it. I got so many compliments for this recipe from my relatives and family. I wanted all of you to try it..I know this will make a special recipe to celebrate this special day..

Ingrediants:
For Base:
Biscuit – 30 powdered finely ( I used Milk Bikis, You can use anything)
Butter – 100 gms Melted
For Cheese Layer:
Paneer / Cottage Cheese – 200 gms
Condensed Milk / Milk maid – 1 tin / 400 ml
Sugar – 2 tblspn
Vanilla – 1 tsp
Geletin – 3 tblspn
Mango Puree – 300 ml
For Mango Jelly Topping:
Mango Puree – 300 ml
Gelatin – 2 tblspn
Method:
Start by soaking the gelatin in cold water. You can use all the gelatin given for the cheese layer as well as the amount give for mango jelly and soak it together for around 15 mins till it plumps up.
Now lets make fake spring form pan. Take a round tin. Line it with foil, make sure the foil comes over the top, so that it will be easy to pull the cheese cake later from the tin. Then line it with cling wrap. Then line the bottom with some parchment paper. The cake tin is done.
Now lets make the base of the cheese cake. Take biscuits in a blender and make into a fine powder. Melt some butter in a pan. Switch off the flame and add the powdered biscuit into it. Mix well. Now pour this in the base of the tin and press it slightly and make a even base. Put the tin in the freezer for 10 mins.
Now make the cheese layer. Take paneer, condensed milk, vanilla, sugar in a blender and make into a fine puree. Pour this in a bowl and add 300 ml of mango puree to it. Mix well.
Now take some water in a sauce pan, and bring it to boil. Add the soaked softened gelatin and mix well till they are dissolved. Now pour half of this gelatin mixture to the cheese mixture and mix well. Pour this over the biscuit layer and put it in the freezer for 10 mins.
Now mix the rest of the gelatin in the 300 ml of mango and mix well. Pour it over the cheese layer and return it back in the fridge for 4-6 hours.
Now remove the cheese cake slowly from the pan with the help of foil and cling film and place it over the plate.
Return it back to the fridge till serving. Slice and serve.
Pictorial:
Take all your ingrediants
Prepare a pan
Soak gelatin in Cold water
Take mangoes in a blender
and puree it
melt butter in  a pan
add biscuit powder
and mix well
Line the base of the prepared pan..Put this in the fridge
Take paneer, condensed milk and vanilla in a blender
and make into a smooth puree
add half of the mango puree to this
Now melt the soaked gelatin in some hot water.
mix well till they are melted
Pour half of that in the cheese mixture
and mix well
Pour that in the pan..Put this in freezer for 10 mins.
Now pour the rest to the mango puree
and mix well
Pour that over the cheese layer
Put the whole lot in fridge
remove it from the pan carefully
Slice and Serve
This makes a perfect center piece for party

    Hi there.. Congrats for 600th post!!I really like the recipe but I don't use Gelatin. If you are going egg-less, you should consider finding non-animal options for gelatin like agar-agar (Chinese grocery store has it), pectin or Guar-gum (should be available in India). Just MHO… I love your recipe and I will definitely try it.

    Your recipes look great, however being vegetarian,
    an eggless receipe with gelatin would be very
    contradictory. Please post a cheesecake recipe without gelatin.

    Wonderful cake!
    I notice that you didn't use springform pan, but instead use regular pan lined with cling wrap.
    I wonder how did you take the cake out without damaging your cake? Did you turn it upside down or lift the cake up by pulling the cling wrap?

    @KarinaYes you can pull it using a cling wrap. But i turned i upsidedown and peeled the cling wrap off and turned it over again.

    Wonderful blog and mouth watering recipes!
    I try to avoid gelatin as it derived from the collagen mainly inside pig skin (hide) and cattle bones. Do you think there is a substitute for Gelatin.

    I was looking for cheese cake recipe that does not require a fancy pan. I stumbled upon your website. This idea of a fake spring pan of yours is yummily tummiliciously super duper one.     Hi… Great recipe… If I am using cream cheese, do I just replace it with the paneer cheese and just follow the rest of the recipe? Still need to add the condense milk? Thanks..

    I tried this dessert but the second layer is kinda grainy no matter howmuch ever I puree it. Will this be an issue ? Why did it become grainy?

      it is because of paneer. no issues, it will work out when u add mangoes

    So should we use 300ml mango puree for cheese layer and another additional 300ml mango puree for jelly topping..So totally we need 600ml mango puree know? And pls suggest me 300ml mango puree in cup measurements

      1 cup mango puree measures 240 ml.so use accordingly

    Hey, Thanks a lot for this recipe I am going to try it tonight for my mom's birthday. Could we use butter paper instead of Parchment paper?
    I have used it for Muffins earlier. Also could you please elaborate on how to take the cake out of the tin.
    I will be indebted to you for all my life if I could pull this recipe off for my mother.

      I think Your gelatin was not mixed enough. U have to add more gelatin.

    I read the full recipe, and looked at all the photos/instructions, and read all the reviews but my question is not fully answered. You stated to use 1/2 to 3/4 cup water to soften the geletin. then the recipe states to add water to pan and bring to a boil and then add the softened geletin. How much water do you put in the pan to boil? It seems like too much water will keep it from setting up firm. Please let me know—I have lots of mangos to use and I am looking all all your mango recipes.
