Eggless Moist Chocolate Cake ( No Butter ) as a Thank You Note

 Weddings are a integral part of the life, But the preparations for it requires so much labour and pain..My wedding preparation is going in a full blast…Relatives are already arriving here. Everyday is a busy day for my mother,she is running here and there like crazy. The important thing is they are not allowing me to cook anything, I mean they are not allowing me into the kichen itself..So I am posting recipes which was sitting in my drafts for so many months..I think I will get into the kitchen after my marriage( I am not sure). Everything is going like a steady stream. I am enjoying each and every moment in my life, I don’t want to miss a single second in my life right now..

I was quite amazed how many wedding wishes I am receiving in the past few days..Quite a lot really. This makes me feel that ” I am not the only one excited about my wedding along with my ‘would be’, but there are so many souls out there, around the world thinking about me and excited like me.. I wanted to do something for those kind souls, my well wishers and my friends who were doing so many things for me. So as a thank you note I want to give them something sweet and special. As a result this cake is born, it is a moist eggless chocolate cake so everyone can dig into it.
Now lets talk about this cake..This was the first attempt of making this cake, so I was afraid that the top may get dried off, so I made a chocolate glaze to protect the top. It ensured me that the top stays nice and moist as the middle. The better thing is it is eggless and butter free. So it is a little healthier..Everyone in my family loved it, and they gave me so many compliments too.. I hope you will like this and tell me if you love it..
Ingrediants:
All Purpose Flour / Maida – 2 cup
Flavourless Oil ( I used Refined Oil) – ¾ cup / 180 ml / 6 fluid ounces
Water – 1 ¼ cup / 300 ml
Cocoa – ½ cup / 55 gms
Sugar – 1 ½ cup / 300 gms
Baking Soda – 2 tsp
Vanilla Essence – 1 tsp
Salt – 1/4 tsp
For Icing:
Chocolate Chips – 1 cup / 150 gms
Method:
Take a 8×10 inch baking pan and oil it generously. Dust it with flour and tap away the excess.

Preheat the oven to 180 degree C / 360 degree F .

Take flour, cocoa, baking soda and salt in a sifter. Sieve it finely and set aside.
Now take water, oil and vanilla in a bowl. Add sugar to it and mix well till it get dissolved.
Now add the sieved flour mixture and mix well.
Pour this in the prepared tin and bake it for 30-35 mins.
Let it cool down and invert it to the cooling rack and allow it to cool down.
Now make the icing. Take chocolate chips in a bowl and melt it using a microwave or a double boiler.
Mix well so that it gets smooth and glossy.Allow it to cool down.
Pour it over the cake and cut into slices.
Serve.

Pictorial:

Take all your ingrediants
Sift together flour, cocoa, salt and baking soda
like this
Take oil, water and vanilla in a bowl
add sugar
and mix well
add in the dry ingrediants
and mix well
Prepare a baking pan
Pour the batter in
and bake it
allow to cool down
Take chocolate chips in a bowl
and melt it down
Pour it over the cake
and cut into squares
Enjoy

    THE CHOC CAKE lOOKS VERY YUM. pLS LET ME KNOW IF CAKES TURN OUT WELL IN MV CONVECTION MODE. RECENTLY I TRIED HOLY COW'S EGGLESS MANGO CAKE. THOUGH IT TURNED OUT WELL, IT WAS HAVING THAT AWFUL OIL SMELL. ( I USED FRESH SUNDROP SUNFLOWWER OIL.) DON'T KNOW WHAT WENT WRONG. MAY BE THE PREHEATING WASN'T ENOUGH. PLS. SUGGEST, AS OTHERWISE I HAD BAKED SUCCESSFULLY USING MY BAJAJ ROUND OVEN AUTOMATIC WITHOUT SETTINGS. BUT HAVING INVESTED IN MV , I WOULD LIKE TO TRY CAKES IN THAT. SO PLS LET ME KNOW

    Thank you for this amazing recipe. Just made it today. I added a little more cocoa powder that what you have mentioned, because I like that bittersweet chocolaty taste. Baked in a microwave until a toothpick inserted came out clean/little crumbs. It was moist and so good to eat!

    This is such an inexpensive method to make a great-tasting cake. Made this cake today in microwave. Thank you for this recipe. The cake came out perfect and moist. Next, I am planning to add some chocolate chips to the batter and check out the taste.

    This is totally mine and my family's favourite cake and so easy that my 2 year old daughter helps me ! I bake it in two sandwich tins and fill with melted chocolate and vanilla buttercream, lush !

    hi aarthi hope u doing well.. yesterday we tried that delicious moist cake as per u r instructions .. but the thing is the presentation looks as per u r pictures but the taste of the cake was not like choco it simply like the flavour of wheat.. and also it became hard as soon it becoms cool.. so plzz tell the the tips to get a choco taste and softness of the cake….

    @asifa noohu This cake is meant to be so soft and moist. I think you must have stired the batter so much so it must have turned rubbery. Try to use good quality cocoa powder.

    Hi. Could you tell me me if I can replace this with whole wheat n do I reduce 2 tbsp of wheat flour and add cornflour to make it soft n fluffy. Thanks a lot n best wishes
