This is a quick, delicious and very easy muffin or cupcake recipe to try. The muffins turn out too moist and fluffy.
Preparation Time : 5 mins
Baking Time : 25 mins
Makes: 6 to 8 muffins
Orange Pulp - ½ cup / 120 ml
Wheat Flour - 1 cup / 120 grams
Jaggery or Brown Sugar - ½ cup / 100 grams
Water - ¼ cup / 60 ml
Vanilla - 1 tsp
Oil - ¼ cup / 60 ml
Chocolate Chips - ½ cup
Baking Soda -½ tsp
(My 1 cup measures 240 ml)
Preheat oven to 180 degree. Line cupcake tray with wrappers and set aside.
Take jaggery and water in a bowl and whisk till it is melted. Strain this and add it in a bowl.
Now add orange pulp, oil, vanilla and mix well.
Add in wheat flour, baking soda and mix well.
Use a icecream scoop to fill the cupcake tray.
Top with chocolate chips.
Bake for 20 to 25 mins.
Remove and serve.
