    Green Vegetable Biryani

    Vegetable biryani is one of the recipe which takes place in our menu often. Each time i do it differently, I love to experiment in this. You can check out my normal veg briyani and dum veg briyani which i posted long before in this blog. Sometimes i make biryani by adding coconut milk in it, sometimes i ground up lots of herbs and add it to the biryani. Will be posting those recipes very soon.

    I made this biryani yesterday and was very lazy to make coconut milk that day, so i ground up some coconut along with the masala. I also added lots coriander leaves to give  a lovely aroma to my biryani and also a fantastic green colour to it. This biryani gets it bright green colour because there is no spice powders added to this. So the colour stay bright and green.Hope you will try this recipe and let me know how it turns out for you.

    Ingredients for Green Vegetable Biryani

    • Basmati Rice - 1 cup
    • Ghee - 2 tblspn
    • Cashew nuts - 10 pieces
    • Onions - 1 large sliced thinly
    • Carrot - 1 chopped
    • Beans - 10 chopped
    • Peas - ½ cup frozen
    • Tomatoes - 1 large chopped
    • Lemon Juice - 2 tblspn
    • Salt to taste
    • Water - 1 ½ cup
    For grinding:
    • Ginger - 1 inch piece
    • Garlic - 6 cloves peeled
    • Green Chilli - 5 or to taste
    • Fennel Seeds / Sombu / Saunf - 1 tblspn
    • Coconut - ½ cup grated
    • Coriander Leaves - 1 cup

    How to make Green Vegetable Biryani

    1. Wash and soak rice in lots of water for 30 mins. Set it aside till use.
    2. Grind all the ingredients given in the list to a very smooth paste by adding some water.
    3. Now heat ghee in a pressure cooker. Add in cashews and saute for a min.
    4. Add in onions and cook for 5 mins till it get golden brown colour.
    5.  In goes the ground masala and mix well. Cook for 5 mins or more till it leaves the sides and oil separates from it. 
    6. Add in all the veggies and tomatoes. Give a good mix. 
    7. Now add in drained rice and toss well with the masala. Season with salt.
    8. Pour in water and squeeze in some lemon juice.
    9. Bring this to a boil. Cover the pressure cooker and cook for 1 whistle or simmer the cooker for 10 mins, Switch off the flame and let the pressure go all by itself.
    10. Open the cooker and Fluff it up with a fork.
    11. Serve with raita.

    Ingredients
      

    • 1 cup Basmati Rice

    • 1 large chopped Tomatoes
    • - 2 tblspn Lemon Juice
    • Salt to taste
    • 1 ½ cup Water
    • For grinding:
    • 1 inch piece Ginger
    • 6 cloves peeled Garlic
    • 5 or to taste Green Chilli
    • 1 tblspn Fennel Seeds / Sombu / Saunf

    Instructions

      What a great briyani! So green and full of vegetables - really perfect for spring. I made it yesterday and I couldn't help sneaking spoonfuls of this dish until dinner. Just try to serve it immediately - the more you reheat it, the more it loses that beautiful green colour.

      And I think I added too much water (about 2 cups), and the rice came out overcooked. I'll cut down on the water next time.

      hi , i hav a doubt. u listed a tomato in the ingredient list. but u didnt add it in cooking.. c d pic u posted nd list..if v use tomato wont it taste like ordinary veg biryani ?
