Gujarati Carrot & Peanut Salad

 This is one of the gujarati salad recipe. I added some peanuts to give a crunchy texture. I served it with my thali meals like poori and aloo masala..

I hope you will love this salad and let me know what you think..
Ingrediants:
Carrot – 2 large grated
Peanuts – 3 tblspn crushed
Cilantro – 2 tblspn finely chopped
For Dressing:
Lemon Juice – 2 tsp
Salt to taste
Pepper to taste
Sugar – 1 tsp
Method:
Mix all the ingrediants given for the dressing and let it them sit till they dissolve.
Take all the other ingrediants in a bowl and toss well.
Pour the dressing over and mix well.
Serve immediately.
Pictorial:
Take all your ingrediants
Mix salt, sugar, pepper and lemon juice in a bowl
dressing done
add carrot, peanuts and coriander leaves in a bowl
pour the dressing over
and toss well
