கார குழம்பு / Kara Kulambu / Brinjal & Drumsticks Cooked in a Spicy Onion Coconut Gravy

Rice and some type of spicy gravies are a common one in a southindian home. We make it daily at home, I love to try different types of gravies so we wont get bored having the same thing again and again. Yesterday i tried this kara kulambu recipe and served it with raw banana podimas, Everyone loved it a lot.I added drumstick and brinjal in this. But you could add any veggies as you like.

The characters of this gravy is sour, spicy, creamy with little bit of sweetness which makes this a awesome kulambu. I am planning to try out more.. I have heard about a recipe called as chettinaad kara kulambu, i dont know how it will taste like, but i think it taste pretty good. Will try that in the coming future..So stay tune for it..

I leave you with the recipe, tomorrow i have a special baked recipe to share with you all, So stay tuned..

Preparation Time : 15 mins
Cooking Time – 20 to 30 mins
Serves – 4 to 5

Ingredients:

Brinjal – 2 medium size chopped
Drumsticks – 1 cut into long pieces & Slit
Onion – 1 chopped
Tomato – 1 chopped
Sambar Powder – 1 to 2 tblspn
Turmeric Powder / Manjal podi – 1 tsp
Salt to taste
Jaggery – 1 tsp or to taste
Tamarind Pulp – 3 tblspn (Click here for recipe)


For Grinding:
Coconut – 1/2 cup
Onion – 1 chopped

For Seasoning:
Oil – 3 tblspn
Mustard Seeds / Kaduku – 1 tsp
Cumin Seeds / Jeerakam – 1 tsp
Fenugreek Seeds / Vendayam – 1/2 tsp
Urad dal / Ulundam paruppu – 1 tsp 
Dry Red Chilli – 2
Curry leaves – 1 spring

Method:

Soak Tamarind in water for 10 mins. Squeeze it with your hands and strain it.

Take Coconut and Onion in a blender and make into a fine puree.

Heat oil in a kadai or pot. Add all the seasoning ingredients and saute for few seconds.

Now add in onions and saute for a couple of minutes.

Add tomatoes in and mix well for couple of mins.

Now add in the turmeric and sambar powder and mix well.

Pour the tamarind juice in and mix well Add more water as needed and bring it to a boil.

Now add in the brinjal and drumstick and cover it with a lid. Let it cook for 10 mins.

Now add in the coconut masala and mix well. Cover again and cook for 10-15 mins.

Once it is cooked, serve with rice.

Pictorial :

Take your ingredients
Take onion and coconut in a blender
make it into a fine puree
Heat oil in a pan. Add seasoning ingredients
saute them for few seconds
add onions and saute them for a while
add tomatoes in
throw in the spice powders
season with salt and jaggery
cook them together
Pour some tamarind juice
Add more water and mix well
bring it to boil
now add in vegetables
and mix well
cover and cook
till veggies are half done
pour over the ground coconut masala
and mix well
cover and cook
Till everything is cooked
Serve

    I made it today! It wasn't really very spicy – after all, it only had two chilies and some sambal. And it's a pity that I didn't have fresh coconut at hand, so it wasn't as creamy as yours. But we still liked it. I have to try more of your brinjal kulambu recipes.

    Hi I have tamarind concentrate it says one teaspoon is equal for 12 person. Tamicon and how much water I must use ?
