Kara Sev / Khara Sev / Spicy Sev – Diwali Snack Recipes

Karasev has to be in diwali menu always…We make this in bulk and pack it in individual covers and sent to our relatives house. Amma makes this using her years old recipe, which was passed from my grandma..And it is a no fail recipe..

This is a spicy, crispy snack which is so easy to make..Just calls for simple ingredients but the measurements is the key stuff. Follow that and you will get perfect kara sev each time.

Preparation Time : 20 mins
Cooking Time: 2 to 3 mins per batch

Ingrediants:
Gram Flour / Kadalai Mavu / Besan-5 cups
Rice Flour / Arisi Mavu -1 cup
Chilli Powder- 3 tblspn
Whole Pepper-3 tblspn
Garlic – a whole head
Asafoetida / Hing / Kaya Podi – 2 tsp
Salt to taste
Oil for Deep Frying
Method:
Grind Pepper, Chilli powder and Garlic to a smooth paste by adding some water..
Take gram flour and rice flour in a bowl and add in salt…Mix this together..
Now add in the ground masala and hing….mix well..
Gradually add in water and make into a slightly sticky dough..
Take your desired mould(Achu) and fill it..
Now heat oil for deep frying….Directly pipe the whole lot straight in the oil..
Fry till it turns crispy and remove on a paper towel…
Now break it into small pieces and let it cool completely..
Store this in a air tight container for several weeks..

Take all your ingrediants
take garlic,chilli powder,pepper in a blender
make it into a fine paste
Now add gram flour in a mixing bowl
add in rice flour
mix well
add salt in this
make a well..
add the ground masala
pour in water
Add asafoetida in…Amma uses asafoetida that comes in a brick shape, which we should dissolve with some water..She always tell me that this is the best one and has lots of flavour than the powdered stuff..
mix well
form a sticky dough
now take your mould…This is called as Thenkuzhal Achu..You can use a piping bag with small tip..
fill that with this mixture
heat oil for deep frying..
press it in..
fry till golden
drain it

    Hi arathy can we make rice flour by grinding rice ? Or do we have to soak it and grind?
