Lamb Kofta Recipe From New TV Show The Chefs’ Line.

Delicious and juicy lamb kofta which has a unique twist of coating hot kofta in a lemony garlicky sauce which really takes this lamb kofta to a next level.

Few weeks back I came across this new reality show The Chefs’ Line. I simply love shows like these. So I watched it for few weeks and simply love it. This show is the ultimate food fight as home cooks try and out cook an entire chefs’ line. Each week there are new home cooks, fighting chefs of an all new restaurant and whipping up an entire course of a new cuisine. Exciting right!

It was fun to explore the various cuisines, with the unique twist in preparation given by the cooks and the chefs. The pro tips by the professional chefs and judges was an added bonus.

This show airs on Zee Cafe at 9.00 PM ,Mon-Fri.

I came across this recipe – “lamb kofta” in the show. I was really surprised to see a lamb kofta recipe that too African style. The recipe is from a restaurant called Africola’s. Delicious lamb koftas are dipped in a olive oil,lemon preserve and garlic sauce.  Then the koftas are served over baba ganoush, roasted eggplants, toasted pumpkin seeds, sea weed pearls and sumac powder.

I wanted to try that recipe badly so recently I gathered all the ingredients and made few changes to the recipe since I didn’t have preserved lemons on hand. It was quite easy to make and the result was delicious.

You can serve it with roti or naan, but I served it with lettuce as a wrap. YUM.

Lamb Kofta Recipe

Ingredients

FOR KOFTA:

  • Minced Lamb Mutton keema - 500 grams
  • Cumin Powder - 1 tblsp
  • Sumac - 1 tblsp
  • Pepper Powder - 1 tsp
  • Curry Powder - 1 tblsp
  • Coriander Powder - 1 tblsp
  • Salt to taste
  • Garlic - 6 cloves chopped finely
  • Mint Leaves or Coriander Leaves - 5 tblsp chopped finely
  • Oil for pan frying

FOR DIPPING SAUCE:

  • Lemon Juice - 4 tblsp
  • Olive Oil - 1/4 cup
  • Lemon Zest from 2 lemons
  • Garlic - 4 cloves chopped finely

Instructions

  • Take all ingredients given for kofta except oil together gently. Divide into small portions.
  • Take portion and press it over some skewers and set aside.
  • Heat a grill pan or tawa with little oil and cook till golden brown on both sides. It will take around 7 to 10 mins.
  • Now mix all the ingredients for dipping sauce and coat the hot kofta in the sauce.
  • Serve.

Pictorial:

1)Take minced mutton in a bowl.

2)Add salt.

3)Add pepper powder

4)Add sumac

5)Sumac adds a nice tang to the koftas

6)Add in coriander, cumin and curry powder

7)Add garlic

8)Add chopped mint leaves

9)Mix well

10)Divide it into equal portions.

11)Make kofta over skewers

12)Like this.

13)Heat oil in a pan

14)Place koftas

15)Cook and keep rotating till it is nicely charred.

16)Meanwhile make the dipping sauce. Take lemon zest in a plate

17)Add some lemon juice

18)Add olive oil

19)Mix well

20)Add chopped garlic and mix well.

21)Now coat the hot kofta in the sauce.

22)The hot kofta will absorb the sauce and stays moist.

23)Serve hot.
