    Maa Vathal Kuzhambu Recipe / Dry Mango Kuzhambu Recipe

    You all know my love for making kuzhambu for lunch, i make different varieties of that each day to pair with my lunch menu. One of my favorite of that is vathal kuzhambu, love it so much.

    This is a different way of making vathal kuzhambu, i added some maa vathal and brinjal in this to make it more tasty. Since there is maa vathal added in this, you dont have to add tamarind. Will soon share the recipe for making maa vathal at home, this time i used the one which my mom gave me..So try this out and let me know how it turned out for you..

    Preparation Time : 5 mins
    Cooking Time : 35 to 40 mins
    Serves : 4 to 5

    Ingredients:
    Onion - 1 medium size chopped
    Garlic - 6 cloves
    Brinjal - 1 cubed
    Maa Vatral / Maa Vathal - 10 pieces
    Chilli Powder - 1 tblspn
    Coriander Powder / Malli Podi - 3 tblspn
    Turmeric Powder / Manjal Podi - 1 tsp
    Salt to taste
    Sugar - 1 tsp
    Rice Flour / Arisi Mavu - 1 tblspn
    Water - 3 cup

    For Tempering:
    Gingelly Oil / Nala Ennai - 3 tblspn
    Mustard Seeds / Kaduku - 1 tsp
    Urad dal / Ulundu paruppu - 1 tsp
    Dry Red Chilli - 2
    Asafoetida / Hing / Kaya Podi - ¼ tsp
    Fenugreek Seeds / Vendayam / Methi Seeds- ½ tsp
    Cumin Seeds / Jeerakam - 1 tsp

    Method:
    Heat oil in a sauce pan. Add in all the tempering stuffs and saute for a min.
    Now add in onions, garlic and saute for a couple of mins.
    Add in brinjal and maa vatral and saute for 5 mins.
    Now add in spice powders and salt, mix well. Let it cook for a min.
    Add in water and bring it to boil, add in sugar and mix well. Cover and simmer for 15 to 20 mins till everything is cooked.
    Now mix rice flour with some water and make a slurry. Pour this into the curry and mix well. Simmer it for 5 mins.
    Serve this with rice.

    Once it is cooked, mix rice flour and water to make a paste..
