    Maddur Vada / Maddur Vade

    If you have any unexpected guest dropping by or  if you are craving for something hot and crispy and fried food suddenly, then this vada may be the answer. This is one of my viewer requested recipe and i am thankful for her because i get to try this vada. They are super yummy.

    They are so easy to put together. You will need just a handful of ingredients and you are in business. This vada is a speciality food from karnataka and seriously addictive when had with coconut chutney. With no more delay off you go to the recipe.

    Preparation Time : 10 mins
    Resting Time : 10 mins
    Cooking Time : 1 to 2 mins for frying each batch
    Makes : 12 to 13 Vada

    Ingredients:

    All Purpose Flour / Maida - 1 cup
    Sooji / Rawa / Semolina - ½ cup
    Rice Flour / Arisi Mavu - ½ cup
    Salt to taste
    Onion - 1 small chopped finely
    Ginger - 1 tsp chopped finely
    Green Chilli - 1 finely chopped finely
    Curry leaves - 1 spring chopped finely
    Coriander leaves / Cilantro - 2 tblspn chopped finely
    Water - 2 tblspn or as needed
    Oil - 2 tblspn + for Deep frying

    Method:

    Take flour, sooji, rice flour,salt in a bowl.  Drizzle in 2 tblspn of oil and crumble them with your hands so that it resembles a crumble.

    Now add in onion, green chilli, curry leaves, coriander leaves, ginger and mix well.

    Now pour in some water and make into a stiff dough.

    Let the dough rest for 10 mins. Now the onions will leach out some water and the dough must have become little softer.

    Divide the dough into equal balls. Flatten the balls with your hands and set aside.

    Heat oil for deep frying. Fry these vada in medium heat oil till they turn golden.

    Serve with any chutney.

      Hi Aarthi... i tried these vada's today...they were yumm but i just want to check are they soft or they are hard and crispy like mathari....because mine were crisp like mathari...if no then where did i go wrong?
