Maida Barfi / Barfi Made with All Purpose Flour – Sweets for Diwali

This is one of the dish which took place in our diwali gift box..I will share the photos of that soon in my other blog..It is such a easy peesy recipe and took only a few minutes to make..Everyone in my family as well at work enjoyed a lot..
I was really happy that I found some flowers which matches perfectly with the barfi..I was lucky enough to find those flowers in our backyard..My Sister was kind enough to pluck it for me..

 I loved the bright yellow colour of the barfi which makes a wow presentation…I hope everyone loved it too..I mean you could use any food colouring as you wish..
Right now I am busy watching masterchef season 2 while I write this post..I want to finish this post as soon as possible so that I can go and enjoy the program..So I stop with this and off you go to the step by step recipe with pictures..
Ingrediants:
Flour- 1 cup
Sugar-2 cup
Ghee- ½ cup
Cashews-3 tblspn chopped
Cardamom / Yelakai-3 crushed
Yellow Food Colouring-a pinch
Method:
Heat ghee in a kadai..Add in cashews and fry till golden..Remove this and set aside.
Now add in flour and fry till light golden colour and you get a lovely aroma..Remove this to a plate and set aside..
Now take sugar in the same kadai and add in some water to cover the sugar..
Bring this to boil and let it reach one string consistency ( ie,if you take the spoon from the sugar syrup the last drop falling from the spoon forms a string shape or if you take some water in a bowl and drop this sugar syrup in that water,the sugar wont dissolve in that..)
Now add in cardamom and food colouring to this and mix well.
Add in the fried flour to this and mix well..Cook this for 5-10 mins stirring continuously..Add in cashew pieces and mix well..
At one stage the barfi will leave the sides and starts to come together..
At that time pour the maida mixture to a well buttered tin and flatten it out…Spread some sliced almond pieces over this for garnishing, but make sure you press the almonds over this slightly so that it sticks to the barfi.
Allow it to cool..It will get harden as it cools down..
Cut into pieces and serve or give it as presents..
Note: After it cools a bit, touch and see..If it is still gooey, don’t panic..Just empty the whole lot in the kadai again and stir few more minutes…Now put it back to the tin and proceed as usual..
Pictorial:
Take all your ingrediants
Melt ghee in the kadai
add in cashews
fry till golden
remove and set aside
now add in flour to the remaining ghee
fry it till nice aroma comes from that
Don’t worry it will be a gooey mess…Now remove and set it in a bowl or plate…Opps i forgot to picture it..
Now take sugar in the kadai
add in water
and mix well
bring this to boil
till it reaches one string consistency
now add in cardamom
and food colouring
mix well
now add in the fried maida mixture
and mix well
stir continously
stir well..
add in cashews and mix well
till it comes off the sides
apply some ghee in a tin
and spread the mixture to a tin
sprinkle with some almonds
let it cool down…Now cut into pieces
Serve

    @mahaI dont think butter will work because butter has some milk solids in it which will give out lots of water first. So you can try half butter and half ghee. The flavour of ghee is what makes this barfi really tasty..
