Mango Sago Pudding / Sago Pudding with Mango Coconut Sauce

For My Hubby:

If we’ve had so many smiles and frowns, twists and turns and ups and
downs in the very first year of our marriage, imagine what the rest of
our married life has in store for us. Here’s to a lifetime of crazy
memories together. Happy 1st Anniversary sweetheart.

A year has flown by and I didn’t even realize it. Is the rest of my life going to zip by so perfectly? I hope so…

This pudding is like a magic…It is eggless, jelly like but with the perfect sauce to soak all those sago pearls in it. This is so perfect for parties. Your kids will love it for sure..I used mangoes since that pairs perfect with sago and also it taste great when combined with coconut milk. So try it out and let me know what you think..



Preparation- Time : 5 mins
Cooking Time : 15 mins
Cooling Time : 2 hours
Serves: 3 to 4


Ingredients:

Sago / Javarisi – 1 1/2 cup
Water as needed
Fresh Mangoes Chopped to serve


For Mango Coconut Sauce:
Mango Pulp – 1 cup
Thick Coconut Milk – 1 cup 
Sugar – 3/4 cup


Method:

Wash sago in water and add it to a thick bottom pot. Cover with lots of water and bring it to a boil.

Cook this for 10 to 15 mins till the sago is fully cooked and traslucent.

Now drain it in a colander or sieve and wash it with plenty of cold water.

Grease a silicon mould or cup. I used my silicon muffin mould.

Once it is drained, spoon it into the greased mould and set it in fridge for a hour.

Now make the sauce. Take coconut milk, mango puree and sugar in a sauce pan and mix well.

Heat this up till it comes to a single boil. Switch off the flame and put the sauce in fridge for a couple of hour.

Now when serving. Run a butter knife around the mould and release the pudding. 

Place it in a plate and spoon some mango sauce over it and top with some fresh mango pieces.

Serve.


Pictorial:

Take sago and wash it well
Take that it a kadai
Cover with water
Boil it till it is cooked
Now time to drain it
Drain it
Wash with lots of cold water
Now time to transfer to a mould
Grease a silicon mould
Spoon the sago into them and refrigerate
Now make the mango sauce
Take coconut milk in a sauce pan
Add in mango pulp
Add in sugar
Mix well
Bring it to a boil
Keep it in fridge
When the sago is set
Run a butter knife around them
Unmould into a plate
Take the sauce
Take a ladleful of the sauce
Spoon around the pudding
Just like this
Add some fresh mango fruits
Enjoy

    Any option to make this without mango as they are not in season.
