Mexican Scrambled Eggs

Mexican Scrambled Eggs
This is a simple and quick mexican brunch dish or even you can have it as a breakfast..This is one of nigella’s recipe..She made this and it was so perfect looking eggs..So I thought I could share that recipe with you in this blogging marathon…It hardly took me 5 min to finish this dish..I used the flour tortilla which I made before..If you need recipe for homemade tortilla please check this..I used capsicum in this but if you don’t have that you could skip that..If you like your scrambled eggs spicy throw some chopped green chillies,that will give a nice kick to this dish….

Ingrediants:
Tortillas-2 sliced into thin strips
Eggs-4
Onion-1 chopped
Tomato-1 chopped
Capsicum- ½ chopped
Salt to taste
Pepper to taste
Oil-1 tblspn
Method:
Beat egg with some salt and pepper and set aside.
In a frying pan add oil and fry the thinly sliced tortilla pieces till crispy.Remove it and set aside.
Now heat oil again in that pan and fry onion,capsicum,tomatoes for 1 min.
Add in the eggs and scramble slightly.Add in the fried tortilla pieces when it is still gooey and runny..Mix well..
Tip this in to a plate and enjoy..

Ur ingrediants
Saute the tortilla crisp in oil…
till it turns crispy
remove it and set aside in a bowl…
now saute some onion in oil
add in bell pepper
add in tomatoes
and pour in beaten egg…
Scramble it.Add some extra pepper in it
add in tortilla pieces
mix well
SERVE
