Whenever i go for shopping, i used to buy variety of beans and legumes. As soon as i come home, i used to soak them in separate containers overnight, drain them and freeze them in ziploc bags. This way i have them handy whenever i need them. But as days pass by, i end up with bit of beans left in each bag which wont be enough to make a entire meal from one of the bags. At that time i put all of them together and cook a simple and flavourful curry. This is my go to curry recipe..
Cooking Time : 40 to 45 mins
Soaking Time : Overnight
Serves : 4
Legumes - total 2 cups dry
(I used green peas, kidney beans, soy beans and black eyed peas)
Salt to taste
Sugar - 1 tsp
Coriander leaves a big handful
Wash and soak the beans overnight. Now drain the water and add it to a pressure cooker.Pressure cook for 4 whistle, simmer the flame and cook on low heat for 10 to 15 mins. Turn off the heat and let the steam escape all by itself. Open the cooker, transfer the mix to a bowl and set aside.
In the same cooker, add in the fresh masala and cook till oil separates.
Add in the cooked beans along with the cooking liquid.
Add in salt and sugar and mix well.
Simmer the pot and cook on low heat for 10 mins.
Turn off the heat and add in lots of chopped coriander leaves.
